Out of town for a few days :)

Hi everyone :)

I just wanted to let everyone know, that me and the rest of my cute little cat family will be heading to the coast tomorrow morning for a few days. My sister is graduating from Bible College tomorrow morning and then the rest of the weekend we'll be spending resting and soaking up each other for a few days just the 4 of us.

Sadly, this means I won't be attending any of the fun link-ups this weekend...unless some are opened tonight...but if they are still open when I get back I will try and link up.

I hope you all have a wonderful weekend. I'll miss I'll my blogging buddies, but I'm so excited to get away for a few days with my family.

Weekly Menu 4/25-5/1

I hope you all had a wonderful Easter weekend!!! Ours was really wonderful. We had beautiful weather up until Sunday, and then the rain, clouds, and wind came in...but we were lucky that we got a few breaks long enough to take a few family pictures and the kids got to do an Easter Egg hunt outside! A lot of pictures were taken, but I was helping Eden hunt for eggs, so all of my pictures are of her. But I know Josh and my one of my sisters got some of Gracie too. When I post the desserts I made for Easter, I'll include some of those photos once I get them all :)

This is going to be a pretty busy week for us. Grace is finishing school this week, My parents celebrate 25 years of marriage, and one of my other sisters graduates from Bible College on Friday, so we'll be heading down to the coast for the graduation and then Josh and the girls and I, will stay down there and make a weekend of it, just the four of us. Josh has been working A LOT of long hard hours lately and I think him, more than anyone else, needs this little break.

It seems like a pretty easy week in terms of cooking goes. I'm not trying anything new, it's all stuff I already have, so that's nice.

I'm only making one specialty thing this week. And that would be a dessert for my parent's anniversary.

Weekly Menu 4/18-4/24

I know my weekly menu is a day late. I had thought about posting it yesterday, but it never really quite happened. So, today it is :)

How was everyone's weekend? I got the girl's Easter Dresses and Josh washed both the cars and...we got to grill! The weather is still...eh eh. At least it's not raining today, but the sun keeps hiding behind the clouds and it's cold outside...maybe to cold to even do some gardening. I'm hoping that as the week goes on the weather gets better.

I got my first 2 plants for my garden this weekend. There was a coupon in our clipper magazine for a free tomato plant at our local Wilco, so I sent Josh down there to pick up one for me and he got me an Heirloom tomato plant. But then my parents decided they weren't going to use the coupon they had and my dad picked me up a Roma tomato plant. I can't wait to get started with the planting process. I have no idea what I'm doing, but I gotta learn so as soon as the weather warms up, I'm going to go planting crazy :)

I was thinking about doing a weekly post on how my garden plants are coming. Would that be silly...I mean it is food related...currently, my plants are hanging out in my large living room window with the bean plants the girls planted.

I made Chicken BBQ Sandwiches with my mom's recipe for Home made Macaroni & Cheese.
I wasn't going to make the Macaroni and Cheese because I was really tired...but when Josh heard I had thought about it, he insisted and I'm glad I did, because he loves it. He always says he eats way to much of it :)

We bought some beautiful Keizer Rolls at the grocery store so Josh is going to make sandwiches on the rolls with chips and fresh fruit, probably some Grapes.

I think it looks like a good menu. I realized last week that I haven't made this Fettuccine recipe in probably about a year and I'm craving it!  Do any of you have plans for Easter yet? 
I have two desserts I'm hoping to make this week. We're having a potluck breakfast Sunday morning at church and Josh will make a breakfast casserole and I'll make a dessert and then if we do indeed end up having dinner with his family, I'll make a dessert for them as well.

My Picky Eater Rule

How many of you have a picky eater in the house? I know a lot of us have dealt with this at one point or another and it can make dinner time such a stressful experience, which it should never be. I firmly believe family dinners ( around the table) are so important to the family. It's a chance for us all to sit down together over something delicious, talk about our days and whatever plans we might have for the coming days.

When my first child was born ( Grace) she was a really good eater. She ate whatever we put in front of her and I think as it is with most young babes and toddlers...anything carb related was her favorite. But there were the occasional times when she would not eat what was on her plate. And when that happens we all know how difficult it can be on us and the child. We as parents get mad and frustrated and your baby ends up crying. That's when Josh and I came up with our one and only rule concerning food.

Take one bite and try it once! This became our motto when we encountered something Grace didn't think she liked. And that's always what it is isn't it. They don't want to try it because maybe it doesn't look appealing enough for them and they think it will taste bad. I am with Pediatricians when they say, you have to try a food on your child about 12 times before they will really officially decide whether they like it or not. Repetition is key. So that's what I did. When Grace didn't want to try something on her plate, I would tell her...take one bite. If you don't like it, you don't have to eat the rest of it, but please try it once before you decide. ( You might want to break the conversation down to simpler terms depending on the age of your child.) And Voila, it worked like a charm. She began trying new foods and 9 out of 10 times, she loved them and would eat the whole thing on her plate. Grace is now, one of the best eaters I know. She is almost 7 yrs old and will pretty much try anything. I love that about her.

My other child Eden is another story. Eden, was a good eater with baby food, but when it was time for her to begin eating our food, she either liked it or wouldn't try it at all. And she was/is way worse than Grace ever was. Which really perplexed me because I've used all the same tactics with her that I used on Grace. Eden is just a bit more stubborn. But I refuse to be the parent that yells at my kid for not eating. I mean let's be honest...if your super upset with your kid because of what she isn't eating, chances are, they are going to get as equally upset and start crying and then that pushes them farther into their stubbornness. We want meals to be a fun time for our children...not stressful and if they feel stressed by dinner or whatever meal they are having trouble with, then it's going to be that much harder to get them to see the light.

If we get our kids to look forward to our meals and have them help us in the kitchen and watch the process that goes into cooking, I think they grow a deeper understanding and respect for it. And this can start at an early age. It doesn't have to be when they are 4 or 5 yrs old. I've always had my kids in the kitchen with me. Except, when the baby gate had to come out because they could hurt themselves some way. But as soon as that phase was over, they are welcomed into the kitchen to watch. A lot of times, both of my girls will bring their stools down from their rooms and stand there and watch and ask a million and one questions. By doing this and keeping the kitchen door open, I believe this helps kids create healthy eating habits and prevent obesity.

But back to trying new things. Let me tell you about last night. For dinner last night, we bought some Swai. If you don't know what Swai is, you are missing out. It's an extremely affordable fish that is much like a catfish but without a fishy flavor. They are raised in Vietnam and shipped to the U.S.. We can normally buy a couple fillets for $3.99 lb and I know I'm getting a great piece of fish for that bargain of a price.

 So last night, we marinated some Swai in a Havana Garlic sauce that we had picked up at the store. We had rice and garlic bread with it as well to even out the fish. Grace, of course loved it. She has grown up on fish and adores it. Eden on the other hand, refused to try it. She ate all of her rice and her garlic bread, but wouldn't touch the fish. Many times, we would tell her to just take one bite and then she didn't have to eat anymore. She still refused. Josh even said," I highly doubt she is going to try this. And I said," She will if she lives in my household, lol!" I finally told her that if she did not try at least one bite of her fish, she could not have ice cream with Gracie. ( The girls had picked out Neapolitan Ice Cream earlier that day.) And still she wouldn't eat and continued to have a grumpy face.  Finally after about 5-7 minutes of Grace and I talking her through it ( but not threatening) she tried it. And you know what, she loved it. In fact, she ate the whole section of fish that we put on her plate, which was quite a bit! And every time she took a bite, she got praised. Positive reinforcement goes a long way with our kids. I could tell Eden was quite proud of herself and when Josh came back to the dining room, he was so surprised to see that she ate it. And she got praised again! Plus, she got her bowl of ice cream.

I'm not saying every meal will be so successful...but you have to keep trying and working at it with your kids otherwise, they'll be the kind of child that only eats boxed macaroni and cheese and chips. Which is fine...in moderation.

So how do you know when to be a stickler to get your child to eat and when to be a bit more lax about it. I say, that whenever you are out at a restaurant or at family's or friends houses...it's okay to not push the limit with your kids. For our kids, we don't take them to restaurants very often. So when they do get to go, it's a wonderful experience for them. Grace at almost 7, knows better than to not eat and wander around. Eden is still learning and I will try and get her to eat as much as I can, but I'm not going to punish her for not eating everything. She's excited to be out in a new place and wants to look around and stare and talk and play.  And just because I let her get away with it then, by no means that I am letting her be the one in control. I'm just simply picking my battles and I think the battles are more often won in our own environment at home. The same thing goes when we're at some one's house. If they don't eat all their food, then so be it. This goes for Grace too, because sometimes she gets distracted. But in her case, there will be no food later and certainly no dessert if she doesn't at least all that is on her plate. Eden, will be allowed to graze...but she does not get dessert later for grazing.

So for you moms ( myself included) stay persistent and loving with your children. Don't ground them for not eating, and do not guilt trip them into eating their food by saying," If you love me you'll try it." Our love is not conditional on whether they eat and I don't want them get that wrong idea of what love means. My mom tried that move on me a few times when it came to onions or other foods I wasn't fond of. . I hated it when she would say that to me, but I always tried the food she wanted me to try. I just didn't like the way she went about it...although her intentions were good. Just let there be consequences for not eating or trying things.

If it works for you, you can find recipes that are full of healthy foods but disguised to make it look like it's not healthy at all. If that works for you, go for it. But I don't really like that route. I think it's slightly deceptive. But that's my opinion.

Good luck with your picky eaters and have patience. They may never like mushrooms or onions ( like me) but if you can get them to enjoy fruit and veggies and maybe the occasional bite of fish, your doing great!

Weekly Menu 4/11-17

This week has been so much of a better week for us. The rain subsided for a few days and my girls got to go outside and play. I've been busy trying to get the front yard weeded and looking better. I haven't done to much, but you can already see the difference and I'm loving the process of getting it to where we want it.

Our weekend has been really good. What about yours? A relaxing day of the gym and grocery shopping with the family on Saturday. We found these adorable little rolls in the mark down cart at our grocery store, so Josh ended up making BLT Sliders...and let me tell you, they were really really good!

Then today, Sunday. We had our morning church service and afterwards we took the girls shoe shopping, because I had a coupon. So now our girls are set for Easter and Spring with matching sandals and cute white dress shoes. And then we took advantage of some fun deals that Albertson's was having and ended saving a boat load...who knew!?

So now, the girls are outside playing with one of their friends, Josh is raking the yard, and I just got done going through all of Grace's clothes in her room and weeding through the Winter and Spring ones and making piles. One pile to keep for when Eden gets bigger and another pile to sale to resale. I've worked up my appetite and we're not going to be doing breakfast for dinner...I think Grace will be disappointed. But I picked up some Swai from the seafood section yesterday and we're going to make that tonight.

Weekly Menu 4/4-4/10

How was everyone's weekend? I hate that the weekends go by so fast. But the good news is, the rain held off till late Sunday night. It was pretty chilly, but we got a lot accomplished even though Josh worked on Saturday. Our lawn is finally mowed and no longer looking like a jungle and I did some weeding in the front yard. But the biggest and bestest thing that happened this weekend was that my girls got a Swing Set. I've been keeping my eye out on Craigslist for awhile ( because buying brand new is just to much money) and I came across one Saturday afternoon. A beautiful, gently used Swing set with 2 swings, a glider, and slide! My girls were thrilled!!! Eden is now calling it her playground, lol.

Weekly Menu 3/28-4/3

Even though March was the month that officially began Spring, I think The Great Northwest has yet to receive the memo. So maybe, April will bring us flowers instead of shower, because I'm tired of the rain and I'm eager to get busy making our yard beautiful. The birds however, are acting as if it's Spring. They've all gotten twitterpaited  on me and are chirping up a storm and running into windows. Mom says, "It's Mating Season and they see their reflection in the glass."  I guess it makes sense because I think mating and baby fever is def. in the air. It seems as though, everybody I know is pregnant or trying to get pregnant or just had a baby.  Don't be looking at me to continue this trend just yet. I'm quite content with my 2 girls. Maybe in a year or two, God will begin pressing it upon my heart to expand the brood. Until then, Josh and I are very very happy.

I hope everyone is staying well. I know viruses are still going around like crazy. So far, everyone in my house is feeling good ( KNOCK ON WOOD), except I still have my cough. But other than that, we're healthy. Which is a major blessing.

I didn't do as much baking as I had hoped to last week. We ended up getting some leftover Texas Sheet Cake from my mom, Josh picked up Sugar Cookies for the girls ( ya know, those really yummy ones with the frosting on them that you buy at the store) and then on Friday night, he brought home donuts. He said, he couldn't resist because the store was just going to throw them away. But, I'm feeling rather sugared out right about now, so for this week, I don't know if I'll make anything. I might...I just haven't decided yet.

Weekly Menu 3/21-3/27

It's Spring, It's Spring, I'm so excited it's officially Spring....but someone needs to let Oregon in on this, because it's still pretty dreary out. How was every one's weekend? I had a hot date with my hubby on Saturday. It was so much fun! It had been awhile since we had a few hours away from the kids. Josh and I got coffee, shopped a little, had a wonderful Italian meal, and saw the Adjustment Bureau, which I thought was really excellent.

Sunday night, I had planned to make soup in the crockpot, but when Josh woke me up to start getting ready for church, I ignored him and went back to bed, which made me late. Josh and the girls went on without me...and since we were on worship and I wouldn't be singing anyways because of my cold I stayed behind to get ready and meet up with them when I was done. But I never got the soup going, so we decided to make a Nacho for dinner and it was so yummy. I loved it because it was super easy and but very filling. I'll have to make a note to make those more often.

So when I wrote this week's Weekly Menu on Monday, I was sick. I had no idea I would be really sick by the end of that day. As Monday wore on, I felt worse and by Monday night I was a wreck. One big, grumpy sick, pmsing mess! Please Pity my husband, he's had to deal with a lot from me this week.

I have hardly been in the kitchen at all this week. Wednesday was the first day I attempted to cook dinner and it was a very joint effort with Josh. Thank goodness he came home from work early ( because he had a short day) because I think I would of been lost without him. Thursday, I went to the Dr. and waited to see him for 2 hours! Yes, I sat in the waiting room for 2 hours. I guess you could say when I'm sick I have patience...I have a cold/flu thing with a sinus infection, so now I'm taking the Z pack and trying to get better.

Today is the first day I have actively participated in my Kitchen duties. I went ahead and assembled dinner early ( Shepard's Pie from the menu earlier this week) and I made Banana Bread which I would of loved to of made it a bit more fancy, but I was lacking fancy ingredients...so it's just a normal banana bread, but it does taste good.

I'm so angry though. I was really excited to do something fun with Grace in the kitchen. I wanted to make a chocolate cake or cup cakes ( her choice) with green frosting. I suppose we still could...but it's not the same ya know? I hate being sick. But here's to getting better and making next week a better week in the kitchen. I wouldn't expect another post from me until probably Monday...but ya never know, I might surprise you. Either way, I wanted to update you all in case you were wondering where I've been. It's been killing me that I haven't had the time, energy, or food to cook and write about. Ugh!!!

Weekly Menu 3/14-3/20

Before I launch into the menu of the week, I just want to say, my heart and prayers are going out to the people of Japan. Such a devastating time for everyone, but especially of those in Japan. It makes everything else that is going on in our lives seem so unimportant when there are people dying every second.  There are many ways to help the people of Japan, but one of the easiest ways is to go through the Red Cross. You can visit the Red Cross website at Redcross.org or text 90999 to donate money from your phone. The Red Cross is asking for a simple donation of $10.00 which is not a lot of money, but it can do so much to help. 

Now for the Menu of the Week. I woke up with a sore throat this morning and a slight cough...which is now giving me the excuse to finally go to the Dr. and get some medicine for the Sinus Infection I've had for over a year. Yes, I said, over a year. That is how much I try and avoid the Dr.'s office.  
A couple of fun things are going on this week. Gracie starts guitar lessons on Tuesday, which she is really excited about. Unfortunately, Joel Harris who has taught everyone in Josh's family music is a very busy guy and he can only fit Grace in this month until the summer. But the two lessons she'll be having this month will determine if she is ready to start guitar, or if she would have an easier time learning piano first and then moving on to guitar, which is what a lot of kids do. Also, we have St. Patrick's Day this week...so wear green. I always say I don't need to wear anything green, because of my eyes :)
A lot of the meals, you will notice are from last week. Josh was on vacation and Grace spent some time with my parents because we did her Spring Break this week as well. So, most of the meals are ROMFLW. ( Roll over meals from last week)

I had so many ideas for something fun to do with Gracie for St. Patrick's Day, but I think since the week is already kind of busy and adding to it that I have a cold...I might just simplify things a bit. Eden is going on a growth spurt kick I believe, and she is walking up to me every 15 minutes saying," I Hungee" and I would love a yummy dessert for just me.

Banana Bread- I think this would make a great snack for Eden and Grace
St. Patty's Day Cupcakes...out of a mix, I'm sorry to say. But I think Grace would have fun frosting the cupcakes with the green frosting I have.

And Josh's mom made Eclair Cake on Friday and I've been craving it since. It's the perfect amount of Chocolate to make a girl happy ;)
