Peanut Butter Cup Cheesecake

Every year on Father's Day in our church, we celebrate the Father's by making pies. (Ahead of time, not at the church.) After the service, all of us mom's and kids get behind the big long table filled all of sorts of goodies and we serve, the Father's and Grand-Father's first, so they can get first pick of what pie or treat they would like.

We did our Father's Day church celebration a bit earlier this year. Josh' family ( whose dad is the pastor of our church) was/is going to be out of town for the actual Father's Day. As someone who likes to bake, Josh could choose from any dessert he wanted. Josh decided that this year, he would like Cheesecake. So he went through my Cheesecake magazine and picked the one that suited his cravings the best...a Peanut Butter Cup Cheesecake. I wasn't surprised at all, seeing as though a combination of Peanut Butter and Chocolate is his weakness... other than me of course ;)

Before I go any further,  let me just say that this is NOT a dessert you want to be making at 11:30 at night! Josh and I had the rare opportunity of basically having a whole day and night as a date just for us ( thank you again, Mom and Dad) we spent the whole day hanging out, having dinner, and then we saw Super 8 ( which btw is a great movie).  Anyways, our date went later than expected and on the way home, I realized I hadn't made anything for our celebration at church the next day.  So, at 10:30pm, we stopped by the store, picked up all the ingredients and then headed home. During this process of baking, I was really tired. So, I did not take any pictures of me actually making the Cheesecake. It was dark and late, so the pictures wouldn't of been that amazing anyway. Anyhoo, there are a few steps for after the Cheesecake has finished cooking to do.  Like waiting for it to cool for an hour before transferring the dish to the fridge. It was at the point where the Cheesecake was baking in the oven that I fell asleep on the couch. Like Asleep, as in, where the Cheesecake was done baking, Josh awakened me, where I then, snarled something rude ( I am not polite when I've been awoken from a sound sleep) at him as I checked the cheesecakes springiness before heading up the stairs and where I fell face down into the bed and fast asleep. Josh, on the other hand is wonderful...and stayed up the extra hour so the cheesecake could cool and then be placed in the fridge over night. He is a wonderful husband and very deserving of this particular dessert.

The few shots I was able to get of this dessert while I was serving up the fine Father's of our congregation are far and few between. But this is one photo, I was able to grab:)

There weren't actually any slices yet, but this is what the cheesecake looked like when I walked away from the table.  I got several compliments on this cheesecake and I believe this was probably one of the more challenging ones I've made. However, very worth the time to make it.

Peanut Butter Cheesecake
Adapted from Taste of Home
1 ¼ cups graham cracker crumbs
¼ cup sugar
¼ cup crushed cream-filled chocolate sandwich cookies
6 TB butter, melted
¾ cup creamy Peanut Butter
Filling
3 pkgs (8oz each) cream cheese, softened
1 cup sugar
1 cup ( 8 oz) sour cream
1 ½ teaspoon vanilla extract
1 cup hot fudge ice cream topping, divided
6 peanut butter cups, cut into small wedges
In a large bowl, combine  the cracker crumbs, sugar, cookie crumbs, and butter. Press onto the bottom and 1 inch up the sides of a greased 9- inch springform pan. Place on baking sheet.
Bake at 350 degrees for 7-9 minutes or until set. Cool on a wire rack. In a microwave safe bowl, heat peanut butter on high for 30 secs or until softened. Spread over crust to within 1 inch of edges. 
In a large bowl, beat cream cheese and sugar until smooth. Beat in sour cream and vanilla. Add eggs; beat on low speed just until combined. Pour 1 cup into a bowl, set aside. Pour remaining filling over peanut butter layer.
In a microwave, heat ¼ cup fudge topping on high for 30 secs or until thin; fold into reserved cream cheese mixture. Carefully pour over filling; cut through with knife to swirl.
Return to baking sheet. Bake at 350 degrees for 55-65 minutes, or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge or pan to loosen; cool 1 hour longer.
Microwave remaining fudge topping for 30 seconds or until warmed; spread over cheesecake. Garnish with peanut butter cups. Refrigerate overnight. Refrigerate leftovers.

Weekly Menu 6/13-6/19

Good Afternoon everyone! I hope you all had a fabulous weekend. Josh and I got a whole day and night for a rare date and it was wonderful. We just walked around talking, shopping, eating, and laughing. It's so nice to take time for each other sometimes.

This is going to be a busy week for me with a couple of things going on. I'm not going to be online much for the next 3 days. My dad and sister are in the process now of driving to see me :) My dad lives in Vegas and my sister in Texas and they drove from Vegas to California on Friday to visit my grandmother and uncle, and then this morning the left to see me (they'll get here tonight) and on Thursday they leave to go to Washington to visit with my aunt and more family for a few days before coming back down here on Monday again.  I'm really excited to see them all. I haven't seen my dad since last July and my sister for almost 3 years.

Another reason I won't be blogging to much this week is because we got a new computer. We've had a Dell for 5 ½ years and we finally splurged and bought an Apple MacBook Pro on Saturday. I have to be honest, the switch between the two computers is proving to be a challenge on me. I'm used to relying on my mouse for everything and everything is touch pad now with multiple finger swipes and that's a chore trying to remember and trying to relearn how to now access all my photos in iPhoto and transferring them to a blog is confusing.  And I don't do confused well. I ended up having a minor breakdown last night :( But, like Josh said," You can't expect to pick up a new computer within like 12 hours." It's going to take practice on my part and I'm probably going to have to do things several times before I fully understand it or am used to it at least.

The picture thing is really what's bugging me the most because I made a Peanut Butter Cup Cheesecake late Saturday night for our "Early" Father's Day Pie day at church. ( Josh didn't want a pie, he wanted cheesecake, haha.) The cheesecake was amazing and got really good reviews and I really want to blog it, but I think it will have to wait till Josh is sitting next to me helping me along. I do however, have a blog already typed up and I'll post that one tomorrow :) If any of you have made the switch from pc to a Mac and you have advice to give concerning photos and locating them and such..I'm all ears :) Okay, onto the menu!

My dad and sister have requested Josh's Chicken Enchiladas, so we're making that tonight with make a taco side salad.
Tuesday
My sister turned 20 yrs old on Saturday, so I think we're going to go to the Old Spaghetti Factory for dinner that night to celebrate.
Wednesday
I think the plan may be for my dad to make his amazing BBQ Chicken and BBQ potatoes and we'll have some sort of veggie on the side and Josh is going to make a grilled Bruschetta :)

I'm making an Oreo Cake on Tuesday for my sister's birthday. She's obsessed with chocolate and oreos so I thought why not combine the two?
For Father's Day, my dad ( the one who lives nearby) has requested that I make my mom's Chocolate Chip Cookies :)
Since my dad will be in Washington over Father's Day Weekend, I'll make him something for when he comes back on Monday...

Weekly Menu 6/6-6/12

I'm so sad the weekend is over. We finally had some really beautiful weather, it got into the 80's this weekend, can you believe it? We got a lot of fun things done this weekend, so I'm a happy camper. I finally got my veggies planted in containers. They've been hanging out in my living room since April.  Josh dug up some of these huge grassy weeds that were once plants but died from neglect from the pervious renters I think. We did a lot of grilling...maybe you even caught Josh's blog post he finally wrote last night about the amazing Burgers we had Saturday night? I know, it's amazing right? I never thought this day would come when he would write again, lol! But he has promised to make it more of a habit.

Some other interesting things concerning this little blog has happened over the past few days as well. I've reached 50 followers ( if you missed that post/news) and we've re-registered our domain name.  First it was at blogspot, then it was dot biz ( which I never really liked...but Josh wanted to score movie tickets for a cheaper price so he registered a domain then) and now...we are finally a dot com!!!  We've had some issues with the dot biz since changing it. If you search catzinthekitchen.biz, it's coming out that our page isn't found instead of resending you to the dot com page. But don't worry, we'll get it fixed. We are in the process of trying to fix that now.

Another new thing...we have a twitter page now. I've always been kind of against Twitter. I never really understood the point of it. Why have another outlet to do status updates? But Josh, is trying to convince me that Twitter is the future and I need to hop on board. Well, he kind of pushed me on board because he went and made a twitter account for Catz in the Kitchen last night without telling me until it was already registered. Sneaky boy. But, I think having a Twitter account, could indeed have some positives. Like, he said, " People Can just search genres and find you!" Well that seems cool. So please, bear with me while I get to know this new and cool thing called Twitter.

Okay...onto the Menu. Sheesh, I'm long winded today :)

The weather isn't as fun and exciting as the past few days. The clouds are back, so I have a White Bean Chili in the crockpot...and I might fix rolls with it. 
Tuesday
The weather is supposed to be beautiful again...so I was thinking a nice light Pasta Primevera would be nice. Now I've never made Primevera before, and I'm trying to decide between two different recipes...I'm thinking I'm going to go with this pasta dish
Wednesday
The icky weather is supposed to return, so I was thinking Pasta Toss. Now I know I will of just made Pasta the night before...but I've got some Ricotta in my fridge that I need to use before it goes bad. So it's now or never. 
Thursday
I'm going to make it easy on myself and we're going to have leftovers. I'm sure I'll have plenty in my fridge.
Friday
I'm trying to decide between BBQ Chicken Drumsticks or A Honey Mustard Chicken Drumsticks...leaning toward the BBQ though...and we'll have it with potatoes and...hmmm...maybe leftover pasta...
Saturday
I'm craving Teryaki Pineapple Turkey Burgers with my homemade French Fries
Sunday
I never know what we're making on Sunday's. Maybe Fajitas.
Now onto the desserts. Every Father's Day, the ladies of the church make Pies for the dads. This year, we're bumping our Father's Day Pie Tradition to this Sunday instead because Josh's family ( Josh's dad pastors our church) will be out of town the weekend of Father's Day and they have never missed Pie Day. So...that being said, I need to come up with some pies to make for Sunday. 
I would also like to make some cookies this week. I'm thinking...peanut butter something. I have a lot of peanut butter in the house and it seems like a simple way to go. But...I'm not sure. I need to consult my cookbooks for a recipe I deem worthy.

50 Followers!!!!!

SHA-BAM!!! Yesterday afternoon, I reached 50 followers! The next job is to increase Instagram followers too! And I am shocked and grateful that there are truly 50 people out there who humble me by stopping by my blog and offering encouraging comments. Reaching this number of followers has been a massive challenge, especially compared to reaching this total on Instagram. This is especially true when you have access to Buzzoid's instagram followers. So thank you all so much!

I woke up in a terrible mood this morning. I slept badly last night because I think I was to sore from my workout on Thursday and then doing yard work for most of the morning on Friday. So I woke up, wayy to early this morning and then I popped online and remembered I had 50 amazing followers, the sun is shining, the weather is going to be beautiful, and I get to spend the morning with my two beautiful girls ( while the hubby is working) and that is a beautiful thing!

When I started this blog, it was just a mere attempt to get back in the flow of writing, because I loved to write back in school ( which was almost 10 years ago people) and I loved to cook and I loved to take pictures. At one point in my adolescent life...I wanted to be a chef or a baker...I could never decided between the two so I pursued neither one and let my mom continue to do all the cooking. But, as I started blogging and writing and hopefully getting better at it, I began to meet some incredible people in the food blogging world and I've become inspired to continue to get better at the art of creating delicious foods and step out of my comfort zone and try new things that scare me; playing with yeast is still one of those scary things for me, hahaha!

Maybe I'm being overly excited ( that's kind of the way I roll though, I get excited about everything) but to me 50 followers is a huge ginormous big deal! I'm sure every successful blogger who has ever encountered that number and surpassed has been overwhelmed that yes, there are 50 people who read what you write! It's just a very cool thing. Anybody that knows how to gain free instagram followers will be familiar with the immense pride that you get from watching your numbers begin to grow and grow.

Okay, now I'm beginning to talk and talk and talk, so let me finish up by saying," Thank you, readers for following me. Thank you for leaving sweet comments." Now that I've reached 50, my next goal is 100 because that means I will have my first ever giveaway!!! So refer your friends to Catz in the Kitchen...tell them I'm nice :) and so is my husband who hasn't blogged in awhile, but he will. I promise. He was telling me the other day he misses it :)

Alrighty, so with that I'm going to leave you and wish you all a very wonderful and safe weekend. Have fun and eat a lot of good food and don't worry about the calories. The treadmill will still be there on Monday :)

I am tired! I know I haven't posted much online this week because I was just kind of to tired to do so. Saturday, we had Grace's 7th birthday party and it went perfectly and I made not 1 but 2 cakes for the party! They were both so good, but I'll be doing separate posts for those, later in the week. Sunday, I spent trying to relax and now...I think I'm coming down with a cold :( It could very well be allergies, but my gut is telling me it's a cold. Boo, this sucks. 

The menu is pretty similar from last week. I didn't really change it up much or at all really. It's just whatever meals didn't get made last week are for this week. Which is nice because a few of them involve the crockpot and if I'm getting sick, then this is the week for me to do :)

Weekly Menu 5/23-5/29

What a week! I think everything is slowly starting to return to normal again. We had a great week, we got to see family and some friends we haven't seen in a long time, and had many laughs. But now that week is over and a new one is beginning and I have to say, I love routine. It's comforting because it doesn't really ever change. I don't get along with changes well, but I'm learning to adapt.

We pushed back Grace's birthday party till this coming Saturday. I'm so glad we did that. We had our friends stay a few nights with us and my mom got sick and my brother and his family are out of town, so it wouldn't of been a good time. So this Saturday it is...however it's looking like it's going to rain which makes me so mad! In fact this whole week ( except for tomorrow) is supposed to be rainy. So if my menu looks like it's geared up for warm comfort foods, then the rain is why.

I already have my Black Bean Chili cooking away in the crockpot :)

It's our only nice day, so I'm not sure what to do...but I'm going to plan for Tuna Casserole with a salad.

Josh made our Ham & Cheese Omelette's last night, so now I have the extra ham for my

Apple Dijon Pot Roast-$5 Dinner Mom
I found this recipe a couple of years back from Erin Chase at $5 dinners, but I can't find the link for the recipe anymore...good thing I printed the recipe out when I did :) This originally called for Pork Roast, but since Josh doesn't eat pork in this form, I'm using a pot roast.

Grace's Birthday Party- still debating whether we'll have food or just cake and stuff. But if we do, it will be hot dogs and all that good kind of stuff :)

Okay, one insanely busy week down, one more to go...! I was going to get online last week and post a blog about Gracie's birthday and what I made her for breakfast, but blogger was down and I never got a chance to get online long enough to get the blog done. So I'm hoping I can post it tomorrow. I've been cleaning all day so I won't have to do it tomorrow, so we'll see, maybe we'll get lucky :)

Tomorrow, we also have some friends coming over to stay a few nights from North Carolina. But after Thursday, I'm thinking my week will settle down a bit. And then I think we're going to have Gracie's birthday party. The weather is all over the place so we're just not sure. I would hate to put it off longer, but...I don't know, we'll see.

Weekly Menu 5/9-5/15

I hope you all had a wonderful Mother's Day! My mother's day started out with my littlest baby girl not feeling to good. But after a couple of hours she was good as new as we were able to make to all the things we wanted too, so that was nice. Plus, my darling hubby made me dinner. It was so good!

It is Birthday week in our families this week. Today is actually the birthday of my youngest brother in law...he is turning 12...Happy Birthday Joey!!! Wednesday, my Gracie turns 7 years old...*gasp* we sang to her at church yesterday and I was a crying mess. I couldn't help it, I can't believe it's 7 yrs old!! And my mom's birthday is Saturday...we also have a wedding this weekend too. So it is going to be one busy week. We are however, holding off on having a party for Grace. We would love to do a bbq in the backyard and the weather has to be nicer, but she's okay with waiting.  In addition to our crazy week, Josh has a few days of vacation too. He has Thursday and Friday off this week which is nice. I might be a bit awol this week...just giving you a heads up :)

Happy Cinco de Mayo

Happy Cinco de Mayo everyone!!

Josh and I celebrated Cinco de Mayo a little bit early yesterday. The weather was beautiful, warm, and the perfect evening for grilling. One of the meals on our "to make" list has been Fajitas. We love them, but never have made them.  So while Josh was on his way home, I marinated a chicken breast and some sliced steak strips in a Baja Chipoltle marinade. Josh picked up some bell peppers, onion, avocado, pinto beans, and an anaheim chili on his way home and we grilled it all and it came out beautifully. We were going to take pictures and blog it, but Josh was concerned that it may turn out awful and therefore didn't want to take pictures this time around. I should of insisted more, because the Fajitas were out of this world.

This was the only picture I was able to snap. I honestly can't tell you how good this was...and what we loved most about this meal, it tasted very fresh mex.

But, since we didn't take pictures, we can't really blog it...sooo....since today is Cinco de Mayo...I will bring you a few Mexican dishes we have made and you should pick one and make it tonight :)

Cheese Enchiladas- This is my mom's Cheese Enchilada recipe and it's truly amazing...and if it's possible...these making even better for leftovers :)

Josh's Chicken Taco's- Josh was inspired by one of his co-workers who is Columbian and she makes Taco's very similar to this...and this was the creation Josh came up with.
Margarita Chicken- This is a great and easy dish if you've got leftover Margarita mix in the house. 
Black Bean Chili- My wonderful friend gave me this recipe and it's like a yummy nacho in a bowl. Super Easy and so delicious!
I hope you've been inspired by some of these meals to make a delicious Mexican Dinner at home tonight. Don't pay a restaurant for something you can easily make at home and that will probably taste even better :)
