Weekly Menu 10/3-10/9

Happy October everyone! It finally feels like Fall and I'm so happy about that. My house is decorated with all of my Autumn harvest decor and the weather has gotten much cooler and alas, the rain has returned. I even put away all the indoor fans today :)

I'm so sorry for not posting while I was away. We got back from Sunriver Saturday evening and we were wiped out from our emotional goodbye of Central Oregon as well as the long drive back home. But we had such a fantastic time away as a family. 8 days of beautiful weather and memory making as a family. I know  that some people would welcome the break from their spouses upon their return of vacation, but I think Josh and I were kind of mourning the reality that awaited us. But, we're back home and though I know we would both much rather still be on vacation, that is not the case and so all we can do is jump back into our everyday crazy blessed life and ride the wave. I for one, am excited to start cooking again!

A lot of the meals this week you might recognize from our previous menu, but we never got around to making them due to time and weather.

Nothing fancy kids, the soup is out of a can and it's a leftover meal from our vacation. We gotta go grocery shopping tonight so it's convenience at it's finest.

I plan on doing some baking this week. My brother in law is leaving for Ecola Bible College on Sunday and even though he has a meal plan down there, I want to send him with some home-baked goodies. And since the family will be headed to the coast to get Jeffrey all settled, they will also be stopping in on Jessica, my other sister in law who is attending the same school and I'll be sending some yummy things for her as well...she doesn't have a meal plan, so I want to make her life a bit easier.

Weekly Menu 9/19-9/23

Wow, this was a crazy busy week! Saturday was full of running errands and then Josh and I came home and just collapsed. He fixed a delicious pasta dinner that warmed us up since it had been raining and we watched an earlier Hitchcock movie and went to bed earlier than we usually would on a Saturday. On Sunday, we took Josh's younger sister back to her college on the coast which is about an hour and a half away from us. And today is Monday, and Josh's other younger sister and her husband are on their way down from Washington to spend a night with us before meeting up with Josh's family who's camping a few hours away.  It's just crazy busy here...and if that is not enough, we are also leaving this week. Saturday morning, we're embarking on a week long trip to Central Oregon. So there won't be a weekly menu next week.  We will be bringing food with us as usual, but I'm not sure what yet and all those fun details. We are really looking forward to getting away with the kids, Sunriver is one of our favorite places to be! So since we're leaving Saturday, I'm leaving our menu for Saturday and Sunday off.

Weekly Menu 9/12-9/18

We're all coming off of a very hot week here in Oregon, but last night the temperatures really started to dip.  When we went to bed, the air was cool and there was a breeze. This morning I woke up to clouds and I had to shut all the windows because the kids were to cold. But now it's afternoon and the sun has come out and so has some warm sunshiny rays. We're expecting still a warm week, but quite cooler than it was last week and I for one am ready for it.

This is the time of year where we begin to really reap the benefits of of our gardening. Sadly though, our one huge heirloom tomato didn't make it due to bugs, but, our bell peppers, herbs, and Roma tomatoes are doing beautifully and since I wasn't able to plant veggies like I really wanted to this past spring, but thankfully I have a very generous church family who've been dropping off tons of fresh veggies at our church so we can all take as much as we like. I've grabbed some zucchini, yellow squash, tomatoes, and cucumbers :) I've got plans for the zucchini and yellow squash this week.

I forgot to mention earlier that Grace is leaving to go camping with my family for a few days at the end of the week.  Her leaving is always sad, because I love cooking for her because of her great appreciation for awesome food.  I plan to do some baking this week as well :)

I'm going to make some cookies for Josh's lunch maybe tomorrow. I'm contributing to a crazy cooking challenge and the challenge for October is Chocolate Chip Cookies. I need to find a recipe on a blog that is a cookie and has chocolate chips in it...so I'm thinking about doing a cookie with chocolate chips and sea salt ;) I've got a few recipes bookmarked that I'll show Josh later on tonight to see what he thinks he would like the best :)


Weekly Menu 9/5-9/11

I know it's Wednesday and my menu was supposed to go up Monday. But Monday, was a holiday ( Labor Day) and we were gone all day and put off our grocery shopping until last night, when Josh and Grace ran out to do it for me.  Speaking of Labor Day, how was all of yours? Josh made an awesome dinner at my parents house with our Fish Tacos with Alaskan Halibut, YUM! And then Josh used a new recipe for some shrimp skewers. The food was incredible!

This week is a hot one! I've decided to stay out of the kitchen and only use the grill and maybe the burners this week. You've heard me mention that we don't have air conditioning, so we're going off the use of our fans. I broke down and bought cookies and snacks for Josh's lunches this week. Normally, I would make cookies...but with the heat, it means no oven cooking. How are you all beating the heat? Or has it cooled down for you all already? Next week is looking a lot cooler and I'm getting myself prepared and working on the menu for next week :)

Coconut Macaroons

I remember my very first time eating a coconut macaroon. It was also the first time I had ever inhaled the amazing smell of garlic powder.  I was over at a friend's house, playing with her brand new Midge Barbie doll that was getting married and playing kitchen with empty spice containers her mom had given her. While we were playing, her mom was in the kitchen baking up some coconut macaroons. It was love at first bite! I couldn't believe I had never ate this cookie before then! Her mom was kind enough to send me home with a little bag, which I quickly shared with my mom and told her she had to make these! Which she did and they were incredible too!

Last week, I was trying to come up with a new cookie recipe for Josh's lunches that called for ingredients which I already had. I had everything for these cookies except for the coconut. I can't tell you how excited I was to recreate this cookie for my family! I, however, added a very small twist to the recipe I was to use. I added those cute itty bitty little chocolate chips to the mixture. So Monday, I got to work in the kitchen to make these delicious little heavenly treats. And you know what? The cookie came out all wrong! I was devastated because I followed my recipe to a T...except of course I used the chocolate chips. But I doubted that was the reason the cookies came out wrong. The inside of the cookie was perfectly executed...but the appearance was not what I remembered it should look like. I think the recipe I used greatly under-estimated how much shredded coconut you should be using. I whined to my mom and Josh about my failed cookie (though they tasted great, they didn't look great) and I determined that I would try the recipe again the following day. Which I did. I added a lot more coconut than the recipe called for and you know what, the cookie came out a lot better. It looked like a coconut macaroon :) SUCCESS WAS MINE!
For this recipe, you'll need two eggs (egg whites that is), shredded coconut, vanilla extract, sugar (not pictured), and if you want...some mini chocolate chips. 
Start by separating the yolks from the whites when cracking your eggs. ( I don't throw away my yolks. I like to save them in a freezer bag for a recipe that may call for just the yolk later on).
Combine the egg whites with vanilla extract and mix on a high speed until soft peaks form. Once you have soft peaks, start adding in your sugar about a tablespoon at a time until you have acquired stiff white peaks.
You'll know your have stiff peaks with the white fluff stands up all on it's own without falling over. 
Fold in your coconut and chocolate chips until it's well combined. 
The fun thing about shaping macaroons is that they can really take any shape you want them too. You can make balls, or little squished cookie shapes. I shaped my cookies on a greased cookie sheet into adorably spiky pyramids. Bake at 325 degrees for about 20-25 minutes. 
You'll know the cookies are done when they are lightly golden brown. Allow them to cool on a wire rack and that's it. You can start popping these cute little babies into your mouth almost right away. Just be careful not to burn yourself.
This is a great low fat cookie that's great for parties or hubby's lunches...or even late night guilt free snacks :) This was a pretty good recipe, but I am interested in trying out more. My mom has one she said I could have, so maybe in a few weeks, I'll give that one a try. The hubby isn't the biggest fan of coconut (which boggles my mind), but I plan on rectifying that :)
Coconut Macaroons
adapted from Better Homes and Garden Cookbook

2 egg whites
½ teaspoon vanilla extract
⅔ cup sugar
1 ⅓ cups shredded coconut (I ended up using closer to 3 cups of shredded coconut the 2nd time around)
½ cup mini chocolate chips (optional)
Pre-heat oven to 325 degrees.
Lightly grease a cookie sheet and set aside.
In a mixing bowl, add 2 egg whites and vanilla extract. Mix on a high speed until soft peaks form. Gradually add sugar by tablespoons until staff peaks form. 
Fold in coconut and chocolate chips and drop and shape on greased cookie sheets. 
Bake for 20-25 minutes until edges are golden and lightly browned. Allow to cool on wire racks and then devour!

Weekly Menu 8/29-9/4

September is this week! For some reason I thought I was still a good 2 weeks away! I feel so scatter-brained. I never got around to making the menu last week. You can blame it on my scatter-brainedness. But we ended up kind of winging it last week and it was kind of fun :) But now, we've gone grocery shopping and my kitchen is stocked with all sorts of Farmer's Market Deliciousness and the temperatures have dropped a little bit which means, I can finally get back to my baking and cooking.

Josh, has been a lifesaver these past few weeks. We've practically grilled something every night. And  last night's dish was awesome! I have to tell you about it real quick. So Saturday, we did a lot of talking about the kind of foods and meals we would like to get better at, etc etc. So after going to the Farmers Market and then picking up a few couponed items at the grocery store, we went home and brain-stormed our menu for the week. We've been really wanting to make a delicious steak dinner. In the past, we haven't invested a lot of money in our steak and because I freak out at the slightest bit of pink in the meat, we've ruined our Steaks.  But yesterday, (Sunday) I was baby-sitting my adorable Niece Lacey and Josh took the girls to get our last of the grocery items. He came back with Steak! Not cheap fatty steak. But delicious scrumptious cuts of meat that had just gone on clearance because they came from the butchers window and needed to be eaten.  Josh ended up making a butter and blue cheese dressing for our steak with a grilled tomato, pear salad and, grilled green beans. We ate by candle light outside with our girls and soaked up every bit of the juicy flavors that came from Josh's perfectly cut steak. As it turns out, Josh fixed the steak as it's intended to be cooked...Medium. Not rare, because that's gross. But Medium was perfect.  It was a good thing we were eating outside in the dark because I could barely see the hints of pink in the meat.  It was such an incredible meal! Grace and Eden scarfed their food down and Grace couldn't get enough, she ate Eden's left over pieces, lol! Josh may or may not blog it yet. We took pictures, but I'm not sure what his plans are yet for those pics :) But it was incredible meal that I do hope we share with you soon.

We bought a beautiful fillet of Salmon and I know Josh has plans to grill it, but I'm not sure how yet.

We have a birthday party for one of my nieces. We'll probably grab something out.

Always an up in the air day. I'm sure we will come up with something delicious :)
Since the temps have cooled down and I have a lot of peaches, apricots, and nectarines...I'm playing with different ideas on what to do with them :)

It is hot! HOT, HOT, AND MORE HOT! Okay, so it's only gotten into the low 90's here, but for someone who doesn't like anything above 85 degrees and doesn't have air conditioning...I think you can understand where I'm coming from.
You've been getting spoiled by so many posts by Josh. Well, let me tell you why that is...I'm not baking or cooking. I'm merely assisting with all the cooking that's going on. In fact, I haven't really cooked anything since last weekend when I baked cupcakes, which I had planned to post. But, because it was so hot, it melted the frosting and then those cupcakes had to be moved to the fridge which then took a lot of the moisture out of the cupcakes. I hear they were good though. I didn't really get the chance to eat any, hahaha!

Since it's so hot out and I'm quite useless in the baking and cooking department ( thank goodness for hubby's who love to cook & grill) I thought I would bring you a list of some wonderful treats that don't involve the store or oven :)

Chill out with some refreshing Strawberry Limeade
Keep it Simple with Smoked Sausage Kabobs 
Let your slow cooker do all the work with Taco Soup
And for after dinner, relax and indulge with this heavenly and chilled Peanut Butter Fudge Swirl Pie
So, if you are in the same boat I'm in with hot heat and no A/C...I hope your inspired with these simple, cooling, and delicious meals that will have your family thanking you :)

Our trip to the coast!

We had such a fun time at the coast with the kids last week. My grandmother owns a beach house in one of the small beach towns that's kind of right in the middle of all the places we like to visit when we go to the coast and she is very sweet about letting us use it when we want too. It certainly eliminates the cost of having to pay a hotel to stay there.

We do a pretty good job of just enjoying what the beach life has to offer and not going crazy with our spending when were down there. Josh and I don't really buy much when we're down there. We like to save our money for the few special meals we have out.

We did most of our cooking at the beach house and only ate out a few times. We practically packed our entire kitchen and brought it to my grandmothers house so we would have options. But I wanted to share a few pictures of the trip with you :) Most of the pictures shown were shot with our iPhones :)

I'm back!!

We had a fantastic week at the beach, I'm wishing we were still very much there. But there is such a thing called reality and to quote Owl City, " Reality is a lovely place, but I wouldn't want to live there!" Yup, that can sometimes sum up the way I think most people feel sometimes.  Since, we've been back, it's been go go go...but as Josh and I were laying in bed talking last night, we said it was maybe a blessing we were so busy being busy because we have Monday morning on the forefront of our mind, that he would be back to work and I would be here missing him like crazy. However, Monday was a pretty wonderful day because Eden turned 3 years old and that is something to celebrate!

Because of Eden's birthday being yesterday, the menu took the back seat. Well, that and we haven't gone grocery shopping yet either...in fact, I'm sitting here at the desk with the grocery list staring me in the face. I have a good idea of what we'll be making, but I like to post the menu once the shopping is all done. We are going grocery shopping tonight, so at least we will finally get some food in the house.

The order of the menu...except for obviously Monday and Saturday are subject to change...so just go with me here :)

We took Eden out to California Pizza Kitchen because she had her free b-day meal.
Tuesday
I have a feeling we'll be grabbing food from the deli and eating while we shop. I would of gone grocery shopping by myself this afternoon, but Josh said he wanted to come with me to look at the seafood choices...but honestly, I think he just wants to be in my company ;)

I've got two other dinners on standby, if for some reason these meals don't sound good to us for some reason.  I'm excited about the corn on the cob dish because Josh is not a fan of corn on the cob, but I thought if I could dress it up with flavors he likes, maybe that would seal the deal for him ;)

I'm going to be making cupcakes for Eden's birthday party again. I gave her a choice between a cake or cupcakes and she wanted the cupcakes. I haven't found a recipe I like yet and I'm kicking myself for not buying the CupCake Bible that I saw at Barnes and Noble last night. Eden wants chocolate and white cupcakes, so we'll see what I come up with it.

Where did I go this week?

Hello everyone!

I fully intended to sit down and throw a post or two of something delicious up here on the blog today. But, we've had some things going on that have kind of had me distracted and have delayed the yummy foods I had planned to write.

The Pizza Post, Josh wrote that up on Sunday night, which was why it went up on the blog earlier this week. On Wednesday, I was cooking all day and updating Catz in the Kitchen Facebook page with pictures and statues of my going ons. My friend had a baby last week, so I was cooking and baking her some muffins, cookies, and dinner to take to her that night.

But let me get back to why there hasn't been much posting other than those few things. On Monday night, Josh was on his way home when he was rear-ended by a huge pick up truck. We've...mostly him have been sorting out the details and handling the phone calls and updates and dealing with a stressful situation. You can read about the accident over at 4Catz @ Home.

I woke up with a headache that got worse as yesterday moved on which prevented me from writing. I honestly did try....I edited some of the food photos and that was about as far as I got. I mostly just hid out in my room as the kids played.  Today, being Friday, I've still got the headache lingering and I'm feeling tired from the long week. I can only imagine how Josh must be feeling and he's actually gone to work all week. I am going to try tonight to write up at least one post for you all so it will post tomorrow morning, otherwise, I'll be writing down at the beach. But there was a reason for my absence these past few days. I hope you all are doing well :) And be on the look out for the Berry Coffeecake I made last week, because it is out of this world yummy!
