This recipe for honey glazed carrots is a sweet, healthy, and cheap 15-minute side dish that your kids will love, too!

This recipe originally appeared on Catz in October of 2013. We've re-made it and re-photographed it and it is ready to serve as your easy, healthy side dish this fall! This is one of those rare, 15-minute, two-ingredient side dishes that goes with a ton of different autumn dinners. Carrots and honey - who knew?

One of the most common problems in dinner planning is what cook on the side to accompany the main course. Here's the problem: A lot of times, you're cooking the main entree, and that can either be a little time consuming or prep-intensive and it doesn't leave you a lot of time to fix something on the side, other than maybe a salad...which is great. I serve a simple garden salad a lot! But salad can be boring if you've had it too often recently...

This pumpkin spice coffee cake with brown sugar glaze is light enough for a breakfast treat or indulgent enough for dessert!

This recipe was originally published back in September of 2014. It's been re-made, re-photographed (see complaints about lighting six years ago!), and it's ready to be enjoyed again this autumn season!

There are several glimpses here and there that tell me fall is fast approaching, but if I wasn't convinced by the leaves slowly changing color and dropping to the ground, or the cooler weather in the mornings and evenings, then it would be the sun setting sooner that did me in. You know how I know that fall is only two and a half weeks away? I know because I was trying to shoot our dinner the other night and the lighting was TERRIBLE!

Weekly Menu for the Week of Sep 21

Hey, guys! It's been a few weeks since we've sent out a weekly menu. If you follow me on Facebook or Instagram you probably know that we went to California over Labor Day weekend and then directly upon returning home, we had to evacuate our house for six days due to wildfires in our area, threatening our home and many, many others. It was a very scary time. I mean I was so stressed out and scared...but at the same time I felt like that whatever happened, whether our house was taken out or saved (our house is fine and so is our town thanks for so many firefighters and volunteers!), I felt peace.

Coconut Chicken Tikka Masala

This coconut chicken tikka masala recipe is kid-friendly, make-ahead easy, and ready to add some variety to your weeknight meal plan!

I did so much cooking during our self-quarantine this past spring, like a lot of people, I bet. I wasn't making as much banana bread as some people, but I was in the kitchen...a lot!

One of the things I did was cook through some of my cookbooks - and I use the term "cook through" loosely, because I don't want to imply I cooked every recipe in the cookbooks I focused on. I didn't. In the Magnolia Table Volume 2 cookbook, I think I made like 17 recipes out of the book, or something close to that number. I just chose cookbooks that were on my shelf and bookmarked all kinds of recipes that looked good to me. One of them was this Coconut Chicken Tikka Masala, and it's so good, I've made it 3-4 times since!

This coconut chicken tikka masala recipe is kid-friendly, make-ahead easy, and ready to add some variety to your weeknight meal plan!

Coconut Chicken Tikka Masala is a really easy recipe with pretty typical ingredients. The only spice you may not have in your pantry is garam masala - which for some reason I had on hand! I'd bought it from my favorite spice seller at our local farmer's market, The Spice Pilgrim. However, everything else in this recipe is easy to find at your local grocery store.

Chicken Caesar Burgers

These chicken caesar burgers combine summer grilling with the delightful flavors of this familiar salad in one easy recipe!

It's a terrible, tragic thing to admit, but grilling season is winding down to a close. Yesterday was the first day of September, and while it's going to be in the 90's this weekend, there are likely just a handful of really warm summer days remaining - the leaves are already beginning to change on the "early warning" trees!

Okay, in reality, grilling season never ends for me, it just becomes less frequent. We live in the Pacific Northwest, so the rainy season runs from late September or early October all the way through to June or July, but I've been known to fire up the grill on a dry-ish day in January with temperatures hovering around freezing - you've got to do what you've got to do!

These chicken caesar burgers combine summer grilling with the delightful flavors of this familiar salad in one easy recipe!

But y'all aren't here to listen to me gripe about the short optimum grilling season here in the PNW. You're here for these chicken caesar burgers. Well, these tasty sandwiches came to be thanks to a fairly mild tweak on a recipe Chels found for caesar salad burgers. We tried out that recipe, and liked it, but felt like a couple of adjustments to the patty would make it even more delightful.

Weekly Menu for the Week of Aug 31

I can't believe we've transitioned out of the summer months and we're into September now. Is it just me or did the summer just fly by? I can't believe that school is starting back up and that the holidays are quickly approaching.

It all kind of makes me sad. I'm just not ready yet for all of that.

I hope you all had a great weekend. Josh and I had a full day on Saturday, but we did squeeze in some time to play frisbee with the kids...and I discovered how much I enjoy it! I can't throw the frisbee to save my life, but I'm great at catching it, ha!

On Sunday, we did a few chores around the house, washed the cars, tidied up the backyard, and managed to squeeze in a date night. It was a good day.

We're heading to L.A. later this week to spend some time with Josh's grandfather, but I wanted to make sure you had a weekly menu to help you feel more organized.

Eclair Cake

If you haven't added this incredibly popular and easy no-bake dessert to your family's repertoire, now's the time to make some Eclair Cake!

I was introduced to this cake way back in 2008 when I was pregnant with Eden and some of my friends had a little baby shower for me. One of them made Eclair Cake and I remember thinking that it was amazing! It was so simple and yet so creamy and chocolatey. 

To put it this way, I think it tastes like a Boston Cream Donut. I would say pie, but I've never actually eaten a Boston Cream Pie, only ever the donut, and I think the flavors taste like the donut...which I'm guessing is pretty similar to the pie version. Have I lost ya or did all of that make perfect sense?

Weekly Menu for the Week of Aug 24

Hey, friends, I hope you had a relaxing weekend. After a month of a lot of activity for us, this was the first weekend in awhile where we had nothing planned and nothing is exactly what we did. I even took a brief catnap on Saturday, which never...ever...happens.

Honestly, I think it was just the thing our kids needed. And yeah, Josh and I, too. Guys, I know the self-quarantine we all did back this spring was hard, but sometimes it's important to also remember how un-busy we were then. It's okay to say "no" and clear your schedule. Families are important and they need tending, too.

Onto this week's menu! I'm testing two new recipes this week and I'm a little excited about it! Hopefully they turn out well and you'll see them in the future!

Bacon Wrapped Cheese Dogs

This is so easy, it's barely even a recipe! Instead of plain ole' hotdogs, why not punch it up with some bacon wrapped cheese dogs?

This is so easy, it's barely even a recipe! Instead of plain ole' hotdogs, why not punch it up with some bacon wrapped cheese dogs?

There's a degree to which this feels like cheating. Is this even a recipe? I mean, if you take a good quality all-beef hotdog and wrap it in bacon and then add cheese...have you done anything other than what everyone should obviously be doing with their hotdogs all of the time? I mean...I guess you could potentially be held off by the intimidation of wrapping something in bacon (so fancy). Or knowing what kind of cheese to use (it doesn't matter, but...Swiss is a fun choice).

Happy Monday, friends! I hope you're enjoying some beautiful summer weather and getting outside often. Soon, it will be fall (I don't even want to say that), but the clouds and rain will reappear, at least in the PNW, and we will be mostly inside again...so I encourage you all to get outside while you can!

I do want to share something special for Josh and me - we celebrated our 17th wedding anniversary on Sunday! It's hard to believe it's been that long. But it has been the most wonderful 17 years of my life. I'm beside myself that I get to spend every day with him.

Okay, enough mushy talk, let's hop into the weekly menu, shall we? I'm throwing in a bit of everything this week because it all sounds amazing!
