Weekly Menu for the Week of Nov 2

I hope you're ready because it's basically #Christmaseverything from now until December 25th! It just feels weird that October is over and we only have two more months of 2020 - I'm sure a lot of you are ready for this year to be over, but I think despite everything going on *ahem election season COVID fires etc* we can still come together and find many things to be grateful for.

Today (Sunday) I'm testing out a roast recipe. I'm hoping it turns out, but I just went to shred it and it wasn't falling apart...hmmm. Not a good sign after seven hours of slow cooking!

I hope you all had a good Halloween. For the first time ever, Josh made the chili and cornbread on Halloween using two new recipes and it was amazing - definitely going to need to remake it so we can share it with you.

Pumpkin Spice Protein Balls

You can easily modify this recipe for tasty pumpkin spice protein balls into an any time of year healthy, filling snack!

If you've read Catz for awhile, you probably know that one of our favorite places to get away as a family (or as a couple) is Sunriver in Central Oregon. Chels and I both grew up in families that vacationed there fairly regularly, and we've taken our little crew over the mountains to relax in this high desert haven as often as we could afford it ever since Gracie was a newborn. We're generally able to slow down quickly (how's that for an oxymoron), surrounded by ponderosa pines and breathing in that crisp high desert air. (This post not sponsored by Sunriver Resort!)

From where we live in the north Willamette Valley, to get over to Sunriver you have to cross the Cascade Mountains via a spectacular volcanic pass. On the other side, the highway straightens out and drops down into a little town with a distinctly old western look and feel called Sisters, so named after the "three sisters" - neighboring mountains that look over the town. Sisters is our stopping point on the way over and the way back for one primary reason - it's the home of Sisters Coffee Co.

For as long as I can remember (and apparently since 1989), the coffee company, operating out of a large log cabin cafe complete with portafilters for door handles, has been a favorite stopping off point for our family. The kids grab some hot cocoa, Chels and I (and now Grace, come to think of it) order coffee, along with some whole bean bags to take home, and there are generally some snacks involved. It's the last week of October...that feels weird, right? I was at Target the other day and all of the Christmas stuff was out and some of the stuff was selling out! I know this because the shelves looked like they had been full and were now picked over. Part of me was completely disgusted by the fact that the Christmas stuff was out and then the other part of me had some FOMO, like I had to buy stuff now, too.

For the record, I didn't buy anything Christmas related. But I really didn't like that FOMO feeling. I don't like feeling desperate.

Spiced Apple Cider Pancakes with Maple Bourbon Syrup

Warm up your autumn weekends with spiced apple cider pancakes, and to really take them over the top, whip up a little maple bourbon syrup!

This recipe for spiced apple cider pancakes is one of the older posts on our blog - originally published in November of 2012! Hilariously, for a reason I simply can't recall, we photographed them alongside starfruit. STARFRUIT. While starfruit is wonderful, is there anything less akin to fall, spices, and apple cider? Must have just been one of those many situations when I temporarily lost my mind. At any rate, we've made some adjustments to the recipe since then. Inspired by Trader Joe's, we added a little pumpkin pie spice (that's cinnamon, nutmeg, ginger, cloves, and allspice, if you were wondering), which brings a bit of fall spice to the palate - so good. And, while we think the original cinnamon syrup recipe is quite yummy, we're crazy about this maple bourbon syrup we found to pair with these outrageously tasty pancakes. Try it. You'll want to keep some in the fridge all the time.

Soooo, let's talk about my crazy neighbors down the street. I think I mentioned them in Tuesday's Tidings? These neighbors are always the first ones to decorate for Halloween, and now they are the very first ones in our entire neighborhood development that have decorated for Christmas. I'm not sure if there is some sort of top secret neighborhood competition going on that I haven't been made aware of, or if they are just really, really excited for Christmas. But seriously, it's only been six days since Halloween. SIX DAYS!!!!

Slow-Cooker Sweet Potato and Turkey Chili

Bold flavors make this Slow Cooker Sweet Potato & Turkey Chili! Omit the meat and you've got yourself a great vegetarian chili as well!

This recipe originally appeared on Catz in September 2013. The post needed a little TLC - some new pictures, an updated recipe and recipe card - and we were only too happy to oblige, as it is an easy, tasty, soul-warming meal!

I always feel like I'm getting away with something when I make chili because Josh loves it. He's not so much a soup person, but he does enjoy a good bowl of chili during the colder months and if I can serve up some bowls, heaping with yummy ingredients, then I'm a happy girl. 

I always make chili on Halloween. I feel like it is the perfect dinner to have my little ones eat before they hit the streets trick or treating. In Oregon, we're lucky if it doesn't rain on Halloween night, but it is almost always very cold. But with warm chili in my kids bellies, I doubt they ever feel the cold!

Remember how I mentioned last week that my menu was already off track? Yeah...that totally happened for real, and for the entire week. I cooked one whole meal off the entire menu.

It was just one of those weeks. But you know what? I know you understand because I'll bet you have weeks like that, too. Where even the best laid plans seem to go up against you at every turn.

This week, I'm going to do the only thing I can do. Move forward, plan another week's menu, and try my best to execute against it!

In other news, Josh has started on that homework station for the kids and it is awesome! He's gotten so much done in the last few days. It's looking really beautiful.

Weekly Menu for the Week of Oct 13

Well, hello, hello friends! I hope you were able to enjoy a three day weekend with your family and friends.

We finished working on Christian's room...and by "we" I really mean Josh. I didn't do much except move some furniture here and there for Josh when he needed help. Christian's room was the last room that had carpet in the house, so Josh replaced the carpet with the same wood laminate flooring that is in the rest of the house, painted the bedroom, installed beadboard, and crown molding. Not to mention, we ordered new blinds (which will be here in November, apparently) and installed a new light fixture that includes a fan. It looks fantastic, is so much brighter and bigger feeling, and Christian is so happy with it.

Now, I still need to organize it a bit and go through his toys for donation. But we're getting there.

The next DIY project Josh is going to work on is a homework station for the kids upstairs. It will involve a built-in bookcase, desk, and cupboards. I'm excited, but it will definitely be a project!

With the DIY chat out of the way, let's talk about food. I predicted to Josh that my menu is going to go out the window this week. It's just a feeling I have, but seeing that today is Tuesday and we've already strayed away (from the menu), well...last night I was supposed to make soup and we ended up trying to eat up all the leftovers in the house instead. Which is good. It saves money, but also it pushes back a meal on the menu.

Weekly Menu for the Week of Oct 5

There you have it. We're officially in October, and I haven't even decorated for fall yet. While I know we're well into the fall season now, the weather has still been blissfully warm and while the trees are turning their glorious colors, it just doesn't seem like fall much to me.

Over the weekend, Josh made these pumpkin waffles and they were so good! The kids were thrilled! Okay, I was thrilled! Ha!

Josh and Christian have been busy over the last few days doing a room makeover for Christian. Ripping out and replacing the carpet with new flooring, painting the walls, adding beadboard wainscoting, and putting up crown molding. He may even get a new light fixture and blinds when we're done. But this is proving to be a great time to go through all of the toys and donate whatever he just doesn't need anymore!

This week at our house, I'm actually recipe testing two dinners and updating the photos to the black bean burgers which I shared on the weekly menu a few weeks ago. Since I just shared the burgers, I'll sub in a recipe for that and for the two recipes I'm testing. I'm pretty excited about them.

Berries & Cream Crêpes

This post originally appeared on Catz in August of 2013. We've remade it, updated the photographs, and updated the recipe format, and these berries & cream crêpes are ready to be enjoyed again! We have made them many, many times over the years, and the whole family is wild about this tasty brunch!

I don't know that we've ever blogged a crepe recipe here at Catz. If that's true, it's a shame, because crepes are not only completely fantastic, they happen to be one of our all time favorite breakfast foods. My girls love them, Chels essentially faints in her chair whenever we make them, and no doubt little Christian will be devouring them shortly - they are easy to chew, after all. We decided to give crepes a whirl about five or six years ago, when Chels purchased an inexpensive crepe pan for me. At that time, I still focused primarily on breakfast foods, with the occasional grilled meal thrown into the mix. We'd both had crepes before, and enjoyed them immensely, but neither of us had ever actually made one. Once we did - we were hooked.

Weekly Menu for the Week of Sep 28

With our trip to California at the beginning of the month, the wildfires and corresponding evacuation, and our annual fall family vacation, I feel as though September...didn't happen? Or at least, is a total blur?

I will say, though, that our week of vacation was just what we needed. We really enjoyed the house we rented in Sunriver - we were lucky enough to find a reasonably-priced home (going in the offseason helps) right on the bank of the Deschutes River. The weather was iffy, but we played games, ate waayy too much food, had a fire every night (and every morning), and went on a number of bike rides. Did I mention we also saw hawks, trumpeter swans, deer, and even a coyote?

Even though I can't change how fast September flew by, I'm determined to just enjoy these last few days - this week's weather looks beautiful and I'm so thankful. I'm going to ease us into fall by making pumpkin bread and cooking up some warm and hearty meals.
