Okay, there's a short story behind this recipe. Chels and I took a trip to Maui last year for our 15th wedding anniversary...a year late, so it was actually over our 16th wedding anniversary! Little Ruby was not quite a year old when our 15th rolled around, so we enjoyed a night away closer to home that year, and saved the bigger trip for later. It all worked out. But...we had never been to Hawaii before (I went when I was two months old - doesn't count!), and we were slightly skeptical that it would live up to the hype. We're not typically "beach people," if you know what I mean - we don't just lie out on a beach in the sun, we don't surf, don't fish, etc. 

As any of you who have been can attest to, it lives up to the hype. We just...relaxed. And it was wonderful. But, this is a food blog, not a travel blog, so returning to the topic at hand...one thing we really enjoyed was eating fresh, healthy breakfasts each morning (typically followed by more indulgent, adventurous meals later in the day!). One breakfast Chels especially enjoyed was among the simplest of all the dishes we sampled - these avocado baked eggs. She loves all things avocado, even more so after not being able to eat them for several years after giving birth to Christian (they just didn't sound good!).

Weekly Menu for the Week of Aug 3

Hi friends! Currently writing to you from sweet northern Michigan at a writer's retreat and loving every moment of it. The weather here is gorgeous and perfectly "temped" at 80 degrees. Lake Michigan is not far from us and I can see why one of my friends who lives here (who I also happen to be visiting) is always trying to persuade me to come visit. I'm so glad I did because Michigan is beautiful! (Editor's Note: This is not a sponsored "Pure Michigan" post, despite appearances.)

I should mention, for those who may be like me and haven't flown since everything started a few months ago, that the airports are super clean and well-kept, and that goes for the airplanes, too. And since we're on the topic of flying, this is the first time since I was 17 years old that I have actually flown anywhere by myself! Can you believe that? Crazy, right? I'll admit, it's a little intimidating doing something like that by yourself when it's been so long, but I survived and now I have zero fears about doing it on the way coming home.

Let's talk about this week's menu. We're getting ready to photograph a few summer recipes that we've been testing out, so I'm going to do my best to link to things like that on the menu for you. Of course, these are all just suggestions and I have a whole recipe archive for you to scroll through - maybe you'll find something there you like better!

Have some blueberries around the the house this summer? This farmhouse blueberry pie is a classic, simple, and approachable way to use them up!

Farmhouse Blueberry Pie Recipe

First, let's make one thing clear - the reason I'm calling this a farmhouse blueberry pie is not because I have a farmhouse. I don't. Like a lot of inspired, wistful folks in the long, wide wake of Fixer Upper, I'm doing my darnedest to make my cookie cutter subdivision home as farmhouse-y as I can, despite my lack of acreage! I have a square of a backyard and, people, I can't even have chickens because HOAs. (And, no, I'm not actually complaining - I'm fully aware that we are blessed to have a place of our own and little patch of grass for the kids to play on! Just trying to be funny!) But that doesn't deter me in the least because even though I don't live on a farm or have goats and chickens, horses and cows, I do have blueberry plants, and this year they gave us a ton of blueberries! A bounty of blueberries that the kids and I spent time cultivating!

See...cultivating...blueberry plants...bounties...these are farmhouse-y words I'm throwing around and it works for this recipe! Plus, it's a blueberry pie and when I think of pie, I think of farms, because as a kid, I'd see scenes in cartoons or movies where someone would take a pie out of the oven and set it out on a windowsill to cool and in the background there would be a tree and a bird singing in the tree and a fence with corn stalks swaying in the breeze.

Weekly Menu for the Week of July 27

Okay guys, this is it, the last week of July! I hope you're able to get outside and soak up some of this summer with even all the social distancing measures in place. Yesterday we hit 100 degrees here, so we packed up and spent the day at the beach - it was warm and sunny, which is so unusual for the Oregon Coast, but what a treat it was!

I'm heading out of town this week, but Josh and the kids will be here, so I've thrown together a menu that he can go by so he doesn't have to stress that dinner time rush without my help. Well, my help and Grace's help because she's a working girl now and officially out of training with Chick-fil-A and working #allthehours!

Ginger Peach Cheesecake

This ginger peach cheesecake recipe is quick, easy, and SO GOOD! There's no crust to make, so it comes together in about 15 min, then oven, then fridge!

I blame all of my cheesecake baking that I've been doing lately on Grace. She's been doing all of the "growing up" things like getting her first car, first job, and next month, it's her license. Cheesecake happens to be Grace's favorite thing on the planet and so I guess it's natural that with all of her growing up, I would savor these days with her still at home and want to bake her all the things.

That's got to be it, because I just don't make cheesecake that often. But here I am making my second cheesecake in two months. I didn't share the last cheesecake I made, but I should. It's just a simple, basic cheesecake - you know basic cream cheese filling and graham cracker crust - but you can really dress those types of cheesecakes up if you want to.

Yes, you can actually use your grill or smoker to make these smoked blackberry mascarpone popsicles (but you don't have to). But, you do have to make 'em!

Okay, we've got to get a couple of things out of the way right here at the top. First - I am not a popsicle guy. I don't care for them at all. In fact, before making this recipe, I probably hadn't had a popsicle since I was like...10. There's just something about the watery, slushy frozen fruit puree running down a popsicle stick while I desperately try to keep it under control...I don't know. Not my scene.

Weekly Menu For the Week of July 20

Can you believe that it's already July 20th? I keep looking at the calendar, which has been been unusually eventful and the month isn't even over yet. We've celebrated the 4th of July, travelled to California for my grandmother's funeral, Grace has "officially" started working at Chick-Fil-A (and loving it I might add - it would be her pleasure to serve you if you were to visit, lol)! The kids also started horseback riding lessons again, which Josh even joined in last week. It's been a busy (compared to the last few months) time for us, but in a really good way that I wouldn't want to change. Really good memories, if you know what I mean, even if some of them are bittersweet.

Next week I head out of town for a few days (by myself), and while I'm excited and nervous about traveling during this time, I think it will be fun. But I'm already working on creating the following week's menu so Josh has some sort of meal plan to cook from. He's completely capable of winging it on his own, but I thought it might be helpful for him if I'm as prepared as possible.

Six of Our Kids' Favorite Cookbooks for the Coming Homeschooling Year

With all of the uncertainty around school this year, we thought we'd share our kids' favorite cookbooks - a great, practical learning at home opportunity!

I want to say that right off the bat that none of this is sponsored, and, yes, most of these cookbooks are geared towards girls. Men are, of course, leading chefs in restaurants around the world, but, in this case, the gender conversation aside, young girls seem to be generally more drawn to baking and cooking than boys, judging by what's been published and what sells! While I have three daughters and one son, I will say that he loves to flip through these cookbooks himself and drool over the food pictures and even picks out recipes for our family to make. He can't wait to step up to the stove when he's ready, and he certainly sees my husband in the kitchen constantly! The truth remains, though, in this particular post, four out of the six cookbooks are for girls. Great for moms and dads of girls, but don't be afraid to check them out, moms and dads of boys!

I was originally inspired by this topic just this last weekend. One of my sisters has recently decided that with everything going on with COVID-19 and some of the changes the schools are making, homeschooling makes sense for them, at least until they see where things are going to land. For anyone who has ever looked into homeschooling or even for those currently in it, looking at curriculum or even trying to figure out what your school year is going to look like and the subjects you want to focus on can be daunting!

Weekly Menu for the Week of July 13

We're back from our trip to California for my grandmother's funeral, which was a really lovely time with family and hearing memories from all of her loved ones. I'm really glad we took the whole family down and spent that time together.

We had hoped to get a new recipe out to you last week, but we were honestly so tied up, I never even had the chance to open my computer. So here we are and it's a new week and I've got a few things lined up for you this week, one post specifically inspired by a family member who has just chosen to homeschool her daughter (my niece) this year. I know a lot of you are parents and are also trying to figure out what this new school year is going to look like for your child and so one of my posts this week is going to be geared towards that topic. I'm really excited about it and I hope it proves to be a good resource for you.

But let's talk about this week's menu. When I began working on this week's menu I had a completely bare fridge because I made sure to use up a ton of things I didn't want to go bad while we were gone. So...I made my menu based on proteins I already hand on hand in my freezer and tried to utilize other items in my pantry and fridge as well that were still in good shape. I think you'll see the simplicity in this week's menu and I'm not hating it!

Weekly Menu for the Week of July 6 - Breakfast Edition!

Okay friends, since we're going to be gone a few days this week for my grandmother's funeral, I thought it would be fun to play with the Weekly Menu a little bit and give you a breakfast edition. All of these meals "could" be made for breakfast, brunch, or dinner. I think you all know by now my extreme love for breakfast for dinner, so I tried to choose some meals that were interesting and that could easily be paired with other items like toast, breakfast sausage, or smoothies to make it a full on meal.

I hope you all had a wonderful 4th of July - we hosted a small family gathering at our house this year and believe it or not, this was the first time we've had 4th of July at our house in the five years we've lived here. Josh made BBQ Chicken and hot dogs and I made my macaroni salad, summer squash capers salad, and blackberry cobbler for dessert. We also had baked beans and my mom made her macaroni and cheese which is basically crack and we had SO MUCH FOOD! I sent food home with everybody! But we had so much fun and had the best spot for fireworks. Seriously, our street goes all out!
