Black Bean Nacho Burgers

I feel like these black bean nacho burgers are the kind of vegetarian burger even a meat-lover can get behind!
 
This recipe for black bean nacho burgers was originally posted on the blog back in March 2013 as a cookbook review and giveaway. It was actually our first giveaway, and as I recall, it went great! We continue to make this recipe on a regular basis, so it only seemed proper to update the photographs and the recipe card. We also started topping the burgers with mashed avocados, which really takes them over the top! If you haven't had a chance to try this delectable meatless meal, January 2021 is your time!

I've always been quite resistant to the idea of meatless meals - or, at least, meatless meals that, by all rights, ought to include meat. As an example, fettuccine alfredo doesn't include any meat, of course, and that's fine. Lasagna? Burgers? Stir fry? In my humblest of opinions, all of these ought to include meat, and when I hear that they don't...let's just say I find myself quite disappointed. Thus, when Chels suggested to me that we ought to try out one of Melissa d'Arabian's "meatless" entrees, I was skeptical (yeah, that's an understatement).

Weekly Menu for the Week of Jan 4

Happy 2021, friends! We made it through 2020 (YAY), so give yourselves a pat on the back! I took last week off (expect for this Top 10 post Josh put together), but I'm back and ready to share the first weekly menu of the new year - I hope you're ready!

Did any of you make resolutions for the year or pick out a word to help you keep perspective or keep goals in mind as you go forward? I'll be honest...I never do resolutions or pick words - but it is always fun hearing what you guys choose. People are so creative!

Josh's birthday is coming up, and he is still deciding what he wants for dinner, but I am adding a new category to our weekly menus - dessert! - and to kick off dessert for this week, it's going to be Josh's favorite - Texas Sheet Cake. I know for some, dessert might seem a little too soon, but the great thing about Texas Sheet Cake is that it's a pretty light cake all around. So eating a square or two isn't too bad...

Top 10 Recipes of 2020

Well, it's that time of year (that is, the very end of the year) when we take a look back at what y'all seemed to enjoy the most. There was a definite 2020/Quarantine theme in our most popular posts this year, with DIY ideas and...you guessed it...banana bread rounding out the top spots!

Specifically, our companion posts on turning a cement porch into a wood deck and turning a concrete slab into a covered deck were most popular overall, and as far as banana bread was concerned, y'all seem to be partial to the Magnolia Table recipe from Joanna Gaines' cookbook, which Chels shared during her review!

But which new 2020 recipes seemed to go over best? We'll post the list below, but I think you'll agree that there's definitely a solid 2020 vibe running through it. Cookies, dumplings, and mug brownies? Check! Scrambled eggs and grilled cheese? Oh, yes. And, of course...dalgona whipped coffee (from the early days of the 2020 craziness).

We've sure appreciated the opportunity to share our recipe ideas and DIY projects with you this year, and we've got lots more coming your way, including DIY posts on our subway tile kitchen backsplash and built-in homework desk and cabinets, and lots of healthy (...er) recipes to kick off your 2021 menus with.

Weekly Menu for the Week of Dec 28

Hey, friends! I hope you all had a wonderful Christmas! Christmas Eve and Christmas Day are always a little on the exhausting side if you've got little ones in the house, but we had a really nice holiday.

You may have noticed that we took off last week from posting the weekly menu - that was on purpose. I, for one, didn't even make one for us and I thought you all might be doing similar things as well!

How are we all feeling about putting the year 2020 behind us and beginning a new year? I'm always ready for a new year and now I'm looking forward to spring, even though we've just begun winter. I always feel like winter should end with Christmas...but really, somehow it's just the beginning.

I am however, ready to cook without a holiday approaching for awhile and just focus on playing in the kitchen. How about you??

A beautiful, festive bundt for the holidays or any special occasion, this delectable cocoa chiffon cake with vanilla glaze is a delight!

This post originally appeared on the blog back in March of 2010, very early on for us! Chels had just started the blog as a way of learning more about cooking and baking and generally trying to improve our family's diet, and this recipe and post is a fun walk down memory lane for us. But, here we are 10 years later, and this poor recipe, which is excellent and from a cookbook that is hard to find anymore, was looking rather sad and neglected. Chels made it again, we re-photographed it, and we ate it again. Yum! We hope you enjoy this updated recipe for Cocoa Chiffon Cake!

Thumbprint Cookies

Easy, buttery, crumbly, and addicting, these thumbprint cookies are ready to be baked, topped with a filling of your choosing, and devoured!

I'm so excited to bring you these cookies! I've been working on perfecting these cuties for awhile now, and after making them and then retesting them, I'm pretty certain that at this point, we have a solid cookie that's going to get devoured as soon as they're served.

How do I know this? Because this is what happened in my house. I was yelling at everyone to stay out of them so that they could get photographed before we shared them around!

The end verdict...amazing! (Their words, not mine!) Though, I have to kind of of agree - these are amazing little cookies.

I love the eggnog thumbprint cookies that we also have on the blog - but they are different. They have a nutty exterior and a fluffy filling that tastes like eggnog without it actually having any eggnog in the recipe. It's a different cookie all the way around. Definitely only to be made during the Christmas/holiday season.

Weekly Menu for the Week of Dec 14

Um, guys...we're halfway through December and only 12 days away from Christmas! How is that possible? As of today (Sunday, Dec 13), I have still not finished all of our shopping. I'm so close, though. Josh and I got quite a bit done the other night which was a huge relief. How are you all doing with your Christmas shopping? And how do you keep the (materialistic) stress of the shopping from taking away the focus on the things that really matter at Christmas?

This week, we celebrate Christian's birthday and he's requested sliders and a birthday cake with dinosaurs and a volcano...hmm? The sliders I can do, but the dinosaurs...I'm going to need to get creative about how to go about that. Hello, Pinterest!

Maybe it's just me, but I have been so cold lately, so this week is going to have dinner ideas that will warm me up and hopefully you, too, if you live someplace cold (and wet).

Dark Chocolate Almond Peppermint Bark

This easy recipe for dark chocolate almond peppermint bark will be a hit with the family, adults and kids alike!

It's funny, we're all so stuffed after Thanksgiving, but come December, bring on the cookies, eggnog, and other festive treats. Almost like we can't get enough...until December 26, and then we cannot imagine eating one more cookie, drinking one more glass of eggnog, or grabbing one more treat.

Which is why I plan on sharing with you as many goodies as I possibly can in the next two weeks. I don't want to bombard you with recipes, so we will keep the same schedule. I hope the recipes we put out are ones you will enjoy with family and friends!

Which brings me to this Dark Chocolate Almond Peppermint Bark. I do already have one Peppermint Bark recipe on the blog. It's made with white chocolate, semi-sweet chocolate, and candy canes, so it does have fewer ingredients than this recipe, but they are both so different - I love this one because it has dark chocolate and candied almonds. Yum!

Weekly Menu for the Week of Dec 7

It's Sunday afternoon and I'm currently sitting on the couch, in front of the fire with a blanket with Grace and Eden and we're watching a movie...but NOT a Christmas movie. We're actually watching Legally Blonde! Just a little girl time while I work on this blog post and Grace bakes some Snickerdoodle Cookies to deliver to some of her friends.

Our weekend was a bit on the busy side, so sitting here and doing something simple like this feels relaxing. We still need to decorate the inside of the house for Christmas, but I think we're going to do that later tonight. I'm very excited! *claps hands* Also, dinner is in the crockpot, so I feel like I'm winning at my Sunday!

I hope you enjoy this week's menu. Some of my favorites are on the menu and it feels perfect for the weather because it has been so, so cold lately! I mean, it feels like it could snow, it's that kind of cold.
