These mini crustless quiche are an easy, make-ahead breakfast that will save you time while being healthy & flexible with what you can add in!

I love a good and easy breakfast...and preferably one that takes 10 minutes or less for me to prepare. My mornings typically have me getting my workouts in first thing and by the time I make my way downstairs and am ready to start school with the kids, the last thing I want to be doing is trying to figure out what to eat.

Weekly Menu for the Week of Apr 5

Hi friends! How was everyone's Easter? Ours was great because the PNW did us a kindness and we didn't get any rain at all! I mean, it wasn't warm, but it wasn't raining. The sun even came out for a bit which was so nice. For dessert, I made my carrot cake, which I love! I will say that Josh attempted to make hard boiled eggs in the instant pot.

He failed. Completely. Haha! Also, sad.

I'm back to recipe testing over here this week, which I'm super excited about - I've got three meals I want to test out (at least)! YAY!

I hope that wherever you all are at that it is feeling more and more like spring for ya. I think we only have one day with rain scheduled in our forecast and it feels amazing! I've missed the sun greatly!

Honey Mustard Sauce

Dipping sauce for fries or chicken? Adding flavor to a burger? Salad dressing? You need a good recipe for honey mustard sauce!

My favorite go-to sauce at any restaurant venue is always honey mustard. I order it so much that I think I can tell when something is house-made or bought pre-made. For the record, Red Robin, Spaghetti Factory, and Chick-Fil-A all make good ones and they are all different. I'm a bit of a honey mustard snob, I guess you could say. I don't like it too sweet and I don't like it too mustard-y.

Since it is my favorite dipping sauce for chicken nuggets, chicken strips, veggie plates, fries, burgers - yes, this would be amazing on a burger - I figured I needed to have a recipe that I could whip up in a jiffy and serve alongside some of our favorite meals.

Yes, burgers are some of my (our) faves and now I'm thinking I need to incorporate this sauce into a burger and I'm thinking it needs to be a turkey burger. YUM!

Weekly Menu for the Week of Mar 29

Well, hello, friends! We're back from our road trip and I am ready for some home cooking! We had so much fun and logged over 3000 miles driving around the country visiting places like Mt. Rushmore and Yellowstone, but I tell ya, I do miss cooking a bit. Josh and I are excited to share our road trip journey with you, so watch for that post in the next week or two.

It's hard to believe that this is the last week of March and that Easter is this Sunday. I'm just remembering back to last Easter when we were first in quarantine and unable to spend the holiday with family. In some ways it feels like we've progressed a lot since then, and in some ways not so much...

Let's talk about this week's menu. I'm actually keeping our dinner menu relatively easy this week since I'm just getting back into the swing of things, like school and sleep, lol! So I'm going to use this week to get my bearings and then next week it's back to business as usual with recipe testing and such.

Toffee Chocolate Chip Banana Bread

This simple recipe for Toffee Chocolate Chip Banana Bread adds a little something extra to the expected ingredient list!

Did you know that for most of my entire life I've hated (yes, I said, "hated") bananas?! The only exception was banana bread, but I also recognized that bananas are actually pretty good for you and they have their uses - like in smoothies, for example. If made correctly, you shouldn't really taste the banana at all, in my opinion.

Weekly Menu for the Week of Mar 15

We're gearing up this week to head out on our road trip. Oh, you haven't heard? Well, we're going to go visit one of my friends in Michigan, visit Chicago, and then travel to South Dakota to (hopefully!) visit Mt. Rushmore before heading over to Yellowstone and Bozeman, seeing and doing whatever is open this early in the season! I plan on taking you along through social media (of course), so make sure you check out my IG profile to see where we're at and what we're doing (if you care about that sort of thing!).

I'm keeping the menu really easy this week for us since we'll be gone for a period of time, but I will include a more interesting menu for you guys this week since maybe you'll be home to actually cook!

Ultimate Guinness Slider

Why is it the ultimate Guinness slider? Because it's made with Guinness in the meat, a Guinness glaze, and Guinness sauce, of course!

We have a few recipes for St Patrick's Day here on the blog, though we definitely worry less about making sure the recipes are authentically Irish and more about ensuring they are festive and delectable, frankly. While I'd love to become more proficient and knowledgeable when it comes to authentic Irish cuisine, the reality is that there are folks out there who are in fact Irish, have been to Ireland, or the like, and are in a better position to share those ideas and recipes!

Ultimate Guinness Slider

For our part, we've kept our "Irish" recipes mostly to meals that are green, made with Guinness, made with Irish whiskey, or use ingredients that have some association with the Emerald Isle. When it comes to cooking with Guinness specifically, the ideas and applications are absolutely endless - stout beer can be an intriguing flavor in a wide variety of applications! Just here on our site, we've used it in chocolate cake, shepherd's pie, and fondue!

Hey there, friends, how is March treating you? I'm about ready for spring, I can tell you that much. Josh and I took a walk the other day and while it was dry, it was also so, so cold. I'm very ready for some sun and warmer temps.

Speaking of the weather, our trees and plants are blooming right now! The cherry blossom trees have begun opening up and even some of my own little plants have buds and blossoms. I love it! Despite the grey skies and rain, it sure is nice to see some of those bursts of color.

I'm doing a bit of recipe-testing this week - I'm excited because I really haven't had a ton of time for it lately, but I'm trying out a new recipe tonight, and I can tell you, it smells good already...

This easy, pantry-friendly recipe for One Pan Roasted Rosemary Mustard Chicken is tasty, affordable, and comes together quickly!

I have Eden to thank for this chicken dish - because it is amazing! I also have Eden to thank for destroying this dish the day we were going to originally photograph this dish, but I'll get to that story in a bit. It's pretty adorable and funny!

One Pan Roasted Rosemary Mustard Chicken recipe

Eden is my child that once she gets hung up on an idea, she doesn't let it go. She will find any way possible to make that idea happen. The way she goes about that may mean that she just dives right in without a plan, asks, begs, and pleads, starts doing said idea without permission, or waits impatiently until we say, "okay."

This recipe, she originally found in her American Girl cooking book, which is a great book for kids between 8-14 to cook from, I'd say. We've made a lot of recipes out of this book and ALL of them have been delicious. With this particular chicken dish, she came to me and said, "I want to make this recipe + two others." Yes, she wanted to not only make the main course, but the two side dishes as well. She wrote down all of the ingredients on the grocery list, checking the pantry and freezer to see what we already had, and proceeded to wait until grocery shopping day came.

Hello, friends! I know it's been awhile since I've gotten on here with a recent weekly menu, but it's for a good reason, I promise! If you head to our main blog page, you may have noticed that the blog looks a little different...that's because we're in the process of a new look for our site! I think it's looking pretty good so far, but we're still working on integrating the look we want, especially as it relates to the home page, which is a bit of a challenge...


Aside from the new blog layout, you may have heard that Oregon got pummeled with quite a massive snow and ice storm. We ourselves were without power for several days, including cell service, and some of our family was out of power for over a week!
