Weekly Menu for the Week of June 21

Happy first week of summer, friends! It sure feels like summer around here to us - it's currently 90 degrees! Can you believe it? I would love to be out in it, but my allergies are preventing me at present. Basically if I go outside right now, I die. I know, sad. Thank goodness for AC, though! Keepin' us comfy inside.

Real quick, before I launch into this week's menu, my friend Phylicia Masonheimer (many might know who she is if you follow her on Instagram or listen to her podcast Verity) is launching her pop-up shop this week...and it starts Friday! Some of the things she's selling are the fan fave "theologian" t-shirt and one of the new items happens to be a custom "theologian" coffee blend by Tag coffee. I've been drinking it the last few days and it is really good. Josh drinks his coffee black and he really appreciated the lack of bitterness. Make sure you guys take a look on Friday and grab a few things!

DIY $20 Newel Post Makeover

We did a makeover of the newel post at the base of our stairs. It cost about $20 in building materials, took about two hours, and we love it!

Alright, this little project, which cost less than $20 in building materials and took me about two hours, was on my to-do list for...about three years? Sometimes it's ridiculous how long it takes to get around to the little things. Now, in retrospect, it's probably for the best - we put in a stone entryway to replace the laminate flooring we had there, and I would have had to tear out the base of this newel post to do that if I'd not put it off so long...but I can't really say I planned it that way. If you were to just go buy yourself a newel post, a basic one like this would probably run you about $150 or so. So you save a little money by doing it yourself, and also avoid the hassle of demoing the old post and having to securely install the new one, etc...

DIY $20 Newel Post Makeover

Okay, when our home was built back in 2005, along with about 15 or 20 (my estimate) other houses in the same phase of our housing development, the builder chose to leave the newel post at the bottom of the staircase a plain 4x4 post. I mean, it's not totally plain, I suppose - it was chamfered a bit and sealed, but rather unadorned, very boring - definitely no character. This is typical for a cookie-cutter home in a housing development, of course, and a lot of our DIY projects here at Catz have been about enhancing that builder-grade finish into something with a little more character.

With the newel post, I wasn't looking for anything ostentatious, or something that would look totally out of place - our house is still our house. It's not a country estate with a hand carved winding grand staircase, and the newel post didn't need to give that impression.

Honey Oat Power Balls

This simple one-bowl, no-bake recipe for honey oat power balls is a great way to get a healthy, grab-and-go snack into your life!

I'm the kind of person who could honestly forget to eat breakfast and lunch and usually be fine till dinner. I try not to do that because then I tend to err on the hangrier side of things. But I usually eat breakfast and eat small things for lunch - like an apple and cheese or a protein smoothie if my workout was closer to lunch time. Josh, on the other hand, is a grazer. He likes to snack on trail mix, cuties, peanuts...He tries to only eat healthy snacks but sometimes a bowl of Cheetos does call his (and my) name, which is why I thought making a batch of power balls may not be a bad idea.

I was right. He loved them and I loved them. I found myself reaching for them quite a bit, and they were relatively filling for a snack! I mean, it wouldn't hold me over for hours, but if I needed a little snack with some good ingredients, one or two would set me up just fine until the next main meal.

Weekly Menu for the Week of June 14

I'm sitting here in our living room right now. It's past 5pm and I'm watching all of the birds come to the feeders for what I assume is their last big meal before they begin to hunker down for the evening. We have a tree in the far corner of our yard, and I just watched a woodpecker climb up the tree so it could get to the suet feeder that's hanging from a branch, and it occurred to me while I was watching that woodpeckers climb trees in a very odd way. They remind me of watching a kid trying to figure out how to climb a rope ladder for the first time. The bird has to sink it's beak into the tree before it can bring it's legs up. I know that's super random, but I just found it to be very interesting.

Bird watching was never really something I spent too much time doing until we had a rental house years and years ago. Suddenly we had trees to hang feeders on and our whole family kind of fell in love with the pastime.

That was quite the random train of thought I just shared...but, in a way...that woodpecker was meal-planning. How's that for a transition?

Weekly Menu for the Week of May 31

I hope you all had an enjoyable Memorial Day, friends! This is such an important day for our country, memorializing all of our fallen heroes. Both of my grandfathers served in past wars, as well as Josh's own grandfather who passed just two years ago. Though thankfully none of them had to offer the ultimate sacrifice on the battlefield, I'm so grateful for their legacy of service, and even more so for those who gave all for our freedom.

Memorial Day in my mind always marks the unofficial kickoff to the summer grilling season. We actually grilled ribs last night - Josh had them on the Traeger for about six hours yesterday afternoon, and they turned out pretty darn amazing.

Baked Parmesan Rosemary Chicken Thighs with Honey Mustard Sauce

This recipe for crispy baked parmesan rosemary chicken thighs finishes off with a sweet and tangy homemade honey mustard sauce!

This post originally went up on the blog back in October of 2014. Since then, Chels has reworked the recipe and we've rephotographed it, as well as updating the separate recipe for the honey mustard sauce that goes along with it! Apparently Chels was recovering from a surgical procedure when she originally wrote this post, which seems like a long time ago indeed, but also serves to illustrate how easy this dinner is to whip up!

Weekly Menu for the Week of May 24

Hello friends! It's good to be back after being gone for a few weeks. After Grace's birthday week + heading out to the beach for a few days, my menu planning was out the window. So it's definitely good to be back and in the swing of things again.

Menu planning tip: when I sit down and begin working on my menu, one of the things I look at is the weather for the week. The weather has the power to influence my menu a lot. Do I want comfort food? Will it rain or be dry? Hot enough out that a big salad will work for the family or cold and we want soup...? See what I mean?

This week's menu was definitely influenced by this week's weather. We're having a bit of everything. Rain, cloudy days, sun, and a high of 70 degree temps.

Freezer Friendly Breakfast Burritos

This easy recipe for freezer friendly breakfast burritos is a great grab-and-go meal, or a make-ahead breakfast for trips and tailgates!

Well, it's been a bit since I've had the opportunity to sit down and write a blog post. As a matter of fact, it's been over two months! The last one was that Ultimate Guinness Slider recipe I shared for St Patrick's Day - yikes! I've got a backlog of DIY posts to write, not to mention a number of recipes to share - just have to find the time (as per usual)...

Freezer Friendly Breakfast Burritos

Let's talk breakfast. Breakfast is, always has been, and probably always will be, my favorite meal of the day. I love eggs (just, like, in general), waffles, pancakes, biscuits, crêpes, avocados, coffee cake, quiche, croissants...you get the picture. I think it's even better than dessert, personally (*gasp*).

Okay, but more specifically, let's talk breakfast burritos. I have always loved breakfast burritos. I think my dad used to make them once in awhile when we were growing up, but for sure when I was in my teens, the guys and I would find random amazing places where they had crazy breakfast burritos. In fact, I remember when my best friend lived near the little country town Chels and I now call home, the (now closed) bowling alley was known for serving the most outrageously huge and delicious breakfast burritos...the bowling alley! Who knew?

Hey guys - we're back! We had some things going on that we needed to tend to as a family, and even took a quick trip to Sunriver (aka our favorite place on earth), to unplug a bit...and it was so good for us.

But now, we're back, and in time for Cinco de Mayo! YAY! This may be my favorite holiday! Make sure you check out our insanely huge long list of Mexican-style Recipes that you can make for Cinco de Mayo on Wednesday.

Speaking of Cinco de Mayo...can anyone else believe that we made it to May??? Weren't we all just experiencing the big freeze of 2021 in February?

Weekly Menu for the Week of April 12

Hello friends, how was your weekend? Josh and I just got done cleaning one of our rugs and the hallway because one of our kids left a blue crayon on the floor and our robot vacuum found it and drug it over our laminate and our rug in the office - so essentially something that is supposed to help clean up messes actually made more work for us. That's what I call a robot fail, lol! No worries though, it all came up really easily and only took us about 10 minutes to clean up. If your robot vacuum drawing on the floor with a crayon isn't a first world problem, I don't know what is.

On Saturday, we celebrated one of my sister's birthdays. She turned 30 on Friday and we threw her a small 90's-inspired Friends-themed birthday party! It was so fun! We had certain foods that were in the tv series for dinner like, lasagna, Tollhouse cookies, cheesecake, and I made the English Trifle (without the meat!). I didn't really know what an English Trifle was until I googled it - apparently they are a very popular dessert and I can see why! It is so easy! I used this recipe from The Recipe Critic but subbed out the strawberries for blackberries and left off the nuts. It was very good and so so simple!
