One Bowl Pumpkin Apple Bake

A dessert that's not just a crisp and not just a cake, this pumpkin apple bake uses a single bowl for prep, and comes together so quickly!

I'll admit, I usually have shared a few pumpkin recipes by this time in the fall season. I love pumpkin recipes and if you don't believe me, check out the pumpkin archive here on the blog. Which reminds me, should I do a Top 10 of my favorite pumpkin recipes post? I'm thinking, yes!

One Bowl Pumpkin Apple Bake

I know some people are die hard apple people once fall hits and others are on team pumpkin. I actually know one person who doesn't like apples, and compared eating apples to eating gravel. I think it's safe to say that person is probably on team pumpkin (and, you know, also wrong...about the apples). Whatever side you prefer, consider this dessert to be a marriage between the two. I think it's delightful. It's like a cake, yet kind of apple crisp-like. And because it isn't a cake or a crisp, but more of something in the middle, I've just decided to call it a bake.

Weekly Menu for the Week of Oct 25

Good afternoon, friends! How was your weekend? Ours was pretty relaxed, despite being on the full side. It was (really) windy and rainy - so basically stormy Saturday and Sunday, so not a weekend for outdoor activities. Josh and I went on a date, we all attended a beautiful wedding together, ran some errands, watched a couple of movies in the evenings, and played games with the kids. We do still need to figure out when we're going to go to the pumpkin patch. I'm hoping for a break in the weather, otherwise, I am just going to Trader Joe's for the pumpkins this year.

Speaking of pumpkins, Halloween is Sunday! I'm a little shocked that we're so close to Thanksgiving and Christmas already. But for the first time in I think 4-5 years, I am actually really excited for Christmas this year. I've struggled the last few years to get really excited - the season just seems to move so fast and the decorations can be really overwhelming at times, but this year, I'm ready for it. I even bought a few Christmas goodies from Target the other day!

Slow Cooker Salsa Verde Chicken Street Tacos

When you need an easy, little-to-no-effort dinner, try this recipe for yummy slow cooker salsa verde chicken street tacos!

I never tire of taco recipes and I hope you don't either. Especially taco recipes that can spend the whole day in a vessel that cooks it for you! I remember when I first tested this recipe - it was towards the beginning of last year and our family was going through a tough and tiring period. I remember not really wanting to cook at all, but also feeling like it was my duty, my job, my role to feed my family, and, yes, feed them well. But I also remember not having much energy to cook or having much brain power to even think about cooking.

If you've gone through a hurdle in your own life (and who hasn't), maybe a specific memory of that time comes to your mind...or maybe you're in it right now. But if you know what I'm talking about, then you know how it feels to not want to cook, but at the same time wanting something easy that isn't frozen or out of a fast food line.

This recipe was born from that time. I remember one morning feeling stressed out and walking downstairs not knowing what to cook for dinner that night. The previous night we'd pulled together a hodgepodge of chicken nuggets and corn dogs for dinner - which is totally fine, I just didn't want to repeat the meal for a second night. I hadn't gotten to the grocery store and we were low on items in the freezer and fridge. But I did have was chicken breast, a can of diced green chiles (I almost always have a can stashed in my pantry), and a jar of salsa verde sauce. So I threw it all in the crockpot along with a few spices that sounded good to me and walked away.

Weekly Menu for the Week of Oct 18

Happy Monday, friends! After fighting off this cold for two weeks now, I'm honestly on the upswing! Finally. I actually got dressed and went out into the world Thursday and Saturday. Even today, I got dressed up and met Josh for coffee since he was in his office today!

It's almost 5 pm and I'm cramming to get this post written before I have to start dinner and out to you TONIGHT before I hit the hay - which sleeping still seems to be the thing that is helping my cold the most. I've been sleeping in so much (okay, so much is like 7 am, but still...) because I feel like I'm up so much during the night coughing. Ugh - I know, I know, it could be much, much worse, but still...colds bite!

Let's talk about this week's menu for a moment - It's going to be tasty. It is supposed to rain here much of the week, so I've chosen meals that are not only going to smell good while they cook away, but also meals that will make us all want to come to the table for dinner.

Kale & Sausage Pasta

Warm, easy, simple, quick, even pretty kid-friendly - what's not to love about this recipe for Kale & Sausage Pasta?

I have to tell you that I am in love with this dish! I have found myself getting inspired by some of the seasonal vegetables that keep showing up at my local farmer's markets and in the grocery stores, and really wanting to use them in my own cooking at home. Instead of spending money on produce that is expensive because it is out of season, I'm trying to make a better habit of getting to know what the in-season produce is and cooking with that.  

To be fair, I don't cook or use kale that often. It's just not one of the lettuces I reach for the most. But, I know that it belongs to the super food family and I'm all about trying to get my family to eat more of those types of foods, especially during cold and flu season. My family does enjoy pasta and sausage, though, so this seems like a win-win in my book.

Weekly Menu for the Week of Oct 11

It's Monday afternoon and I'm currently still sick. Blah. Last week, the kids got sick, and then Josh, Grace, and I got sick. Everyone is feeling better except for Josh and I! The weekly menu is late, I know. I actually wrote last week's menu but due to various appointments and things going on it just never happened. Which I think is just as well since we all got sick anyway. As it is now, my cold is all in my sinuses, and my head just has a hard time concentrating, but better late than never...and it is a holiday for our family, so since we all have the day off, it just made sense for all of us to sleep in and rest today.

I did try to use my time last week wisely, even though we were all coming down with this yucky cold. I've been busy recipe testing and cooking new things and that has been such a treat. I really struggle with trying to make the time to do those things, but since the kids were under the weather, baking and trying new things out just seemed like the right way to go. I'm eager to share some of those recipes with you in the near future!

But for right now, I do have a menu that's ready to go, so let's check that out...

Coconut Rice

This recipe for coconut rice, with its warm, nutty flavor, has become our go-to simple side for weeknight dinners!

Before I launch into how amazing this recipe is, I'm just going to be real with you mom to mom or woman to woman. (Do I have male readers? Fine, human to human.) I'm exhausted. Are you tired, too? It has taken me three days to get to the point in my schedule where I could actually sit down and write this post without interruption (I know for a fact, I'm not the only one in this boat!). My husband and son are at Bible study and I had promised the girls that I would watch a show with them, but you know what? I can't. The show they turned on - which is a show called "Miraculous," by the way - I just can't watch it. Because I'm tired and the voices of the cartoon characters at this moment in my day make me want to pull my hair out! The girls understood, thankfully, extended me a little grace, and now I'm comfortably sitting on my bed, with my cat, working on this post.

I tell you all of this because while I know it has nothing to do with a recipe at all, I do bet that you understand that the daily demands of schedules, kids, appointments, failed meals, lack of sleep, and traffic can be very wearing on a person.

Weekly Menu for the Week of Sep 27

Good Morning (or afternoon/evening - depending on when you read this post), friends! I hope you all had a wonderful last week. We were back in Sunriver for a few days last week, which was an unexpected treat. I know what you're thinking...weren't you just there? Yes, we were. We had our annual getaway down there two weeks ago, and then got an invite from my parents that they had extra space at a house they were renting if we wanted to bring the kids back down for a few days, so we did. It wasn't vacation, but it was beautiful and the kids really enjoyed having a couple of extra days in their favorite place. We're home for a good long while now, though, I think!

Our trip to Sunriver always signals the end of our summer break for us. It's our last hoorah before our fall schedule begins. It helps us get into the mood with the change of the seasons and when we come back, we're usually ready to get going with school and all of our other activities. And I'm now finally ready for fall. I decorated the front porch a bit on Sunday and all of the fall bins are sitting in the office ready for me to rediscover with excitement and renewed energy again.

Ham and Roasted Red Pepper Panini

If you have a panini maker, great! But if not, that's okay for this Ham and Roasted Red Pepper Panini recipe, too!

DO NOT let the word panini scare you off. You absolutely do not need a panini maker to make this sandwich. And if you don't know what a panini (okay, panino...anyway...) is, don't even worry about it. It's just a fancy word for a toasted sandwich made with Italian bread. I mean you could call a grilled cheese sandwich a grilled cheese panini and it would mean the same thing...and yet, so fancy!

Weekly Menu for the Week of Sep 20

We're back from a week of vacation in our favorite place on earth, Sunriver. We spent time reading, playing games (a lot of Chess and a lot of One Night Ultimate Werewolf), riding our bikes, drinking coffee, eating, and spending time by the pool. I think that is the most unexpected part of recent trips for us - how much we as a family have come to love laying by the pool. I mean it helps when the place you're staying has a restaurant onsite and you can order snacks, keeping the kids happy all day. I had no idea that Ruby was such a fish! She loved the water.

We'll have a chance to dash across the Cascade mountain range to Central Oregon one more time and visit with family for a couple of days before really settling into our autumn routines (though Josh has to work this time), but I still wanted to be sure we got out a full slate of menu ideas, including breakfast and dessert!
