Weekly Menu for the Week of Oct 2

Happy first week of fall! Our first day of fall (yesterday) was so beautiful and surprisingly warm compared to all the rain we had last week. It was sunny and around 60 degrees. Kind of a perfect fall day! Next week we're headed to a pumpkin patch, and I'm really hoping to also go apple picking. I've never done it before, so that could be really fun!

We had some comfort meals last week, but since the weather is looking nicer for this week, I'm throwing on some dinner favorites that are easy (truly, like quick meals), but also really satisfying to eat.

Oh, friends...I hope that you had an incredible weekend. I hope that the weather was not gloomy or rainy, but was one of those wonderful sunny fall weekends that allowed you to get outside. Our weather this coming week is looking suspiciously fall-like so my menu will reflect that. I'm not excited for the rain, but I am ready for some of my favorite comfort foods.

I've been polling my kids a lot lately, asking them for dinner ideas and they have been giving in abundance. This really helps me when I'm feeling that lack of motivation around what to cook. I just keep a running list to refer to, and it's been so helpful!

Happy Monday, everyone! I hope you all had a wonderful weekend! Ours was good. I wouldn't say necessarily relaxing, but it was productive. So there's that. Let me just say, tackling kids fall clothing needs - as in going through their wardrobe and seeing what they've grown out of and what still fits...and then going shopping for it! I tackled Cadáin, Ruby, and Christian's wardrobes this weekend and got two out of the three completely shopped for. That's what I call...almost winning. Normally I love shopping for clothes, but it is more stressful when it involves multiple kiddos!

Let's talk about food! I'm just going to go ahead and share the menu with you and hopefully you can find something on there that sounds good and, like, you just have to make it now! Know what I mean?

When September rolls around, I instantly start craving all of the yummy fall comforting dishes, like soups, casseroles, and apple spiced desserts, and of course, pumpkin flavored everything. Today, I'm bringing to you a pumpkin cheesecake.

Now you might ask, hey Chels, don't you already have a pumpkin cheesecake on the blog? I'm so glad you asked (and are paying attention), because I do! But, I do not have a "classic" pumpkin cheesecake in my archives. I have a pumpkin latte cheesecake, swirled pumpkin cheesecake bars, and a pumpkin cranberry cheesecake. But no basic, classic, pumpkin cheesecake. Seeing as how cheesecake is Grace's favorite dessert, I felt obligated to not only make one for Grace, but to also get one on the blog for you guys.

Weekly Menu for the Week of Sep 11

After taking the summer off from weekly menus, we're back! I know for a lot of you, back to school began last week; for us, it begins this week. We spent last week in Sunriver (Central Oregon) for a family vacation, which was so nice, but, alas, not super relaxing because we also have a 14-mo old toddling around and teething. But it was still a really good time, much of it spent outside, with each other.

This week is Ruby's birthday (and my brother's birthday), and as our birthday tradition goes, she picks dinner and dessert. She's requested waffles and a fruit salad with a chocolate pie and whipped cream - so I'm going to make this French Silk Pie from Handle the Heat.

Easy Back to School Recipes for Fall 2023

I'm still hanging out in this shocked place that our summer is over and school is beginning. Like, why? Are all of you ready? Because I'm not! I'm holding onto these summer days with both hands and I'm determined to get the most out of them.

However, the reality is that it is back to school season, and between sports, extra-curricular activities, helping with homework, new transitions, or just trying to find your new normal, you might be on brain overload and just need some recipes handed to you on a silver platter that say, "make this!" I want to try to help remove some of that mental planning that goes into meals so you're not just throwing your hands up and declaring, "It's cereal for all...again!" 😆

I've divided this post into two sections: Breakfast and Dinner.

Breakfast, because it's the most important meal of the day. I didn't always believe that when I was younger, but it's true. Your body (and our kids bodies) needs fuel after sleeping 6+ (hopefully) hours, and we're going to ask a lot of it during its awake period, right?

Dinner, because it's that post-activity fuel food, but also so much more. Dinner is good for habit-making. Dinner is community. Dinner is fellowship. It's that time when we slow down and eat without so much rush and ask questions and catch up. It's good for digestion. It's good for relationships.

This grilled burrata salad is fresh late summer goodness on a plate. Or a platter, as the case may be. It's beautiful to behold, with its fresh green and red vegetable colors offset by the luscious white of the burrata (if you don't cook with burrata...you will after trying this recipe). That beautiful appearance translates to the flavor and texture as well - a little charred, a little buttery, a little crunchy, a little juicy, a little salty...can you tell I'm more than a little smitten with this dish?

Maple & Sea Salt Granola

Granola can be expensive and full of sugar, but it doesn't have to be - this recipe for Maple Sea Salt Granola makes it easy to make your own!

Maple Sea Salt Granola

This granola is so good! Like, you just want to grab a handful as you're walking past the open pantry to munch on, kind of good! And we love granola so much in this house that when we run out, Josh and Grace kind of act like there is an emergency situation..."When are you going to put granola back on the grocery list?!"

Usually Josh and Grace just top their greek yogurt with it. Sometimes, Josh will fill a ramekin up with granola and add a bit of almond milk for a late night snack. My favorite way to enjoy granola is topping my smoothie bowls with a generous handful - texture, baby! But like I said, we've also been known to grab a handful directly out of the container, too.
