Weekly Menu for the Week of June 12

Happy Tuesday, friends, I type as a yawn escapes my mouth...Cadáin, who is now almost one year old, isn't a fan of sleeping through the night, so we find ourselves often very tired the next day. I feel like we're constantly playing a big game of catch up in pretty much every area. Ask me which area of life I feel like I'm crushing right now...and I don't think I would know how to answer (and definitely not because I'm crushing them all...)!

For a lot of you, school has ended, or has mostly ended. We're pretty much done, although still working on a bit of math and French, and I have some things I want the kids to focus on during the summer, but a very light load. I can't do much more than that right now, cuz I gotta sleep sometime! Haha!

Happy June to you! I was kind of struggling with what to make this week for the weekly menu and I think I've just decided to make some of mine and the kids favorites for dinner. What's your week looking like? Our weekend wasn't super restful - we had a bunch of errands that needed to be taken care of. However, summer break is here (except Eden wants to make some more progress in math and we'll continue read aloud), but I think this week is a good week to tackle my yearly spring clean of the kids' bedrooms. I do this every year before we clean out our garage so we can have a huge pile of things to take to donation...I'm ready for it.

Last week of May and it's grilling season kick off - let's gooooo! I've got a few recipes over the next few weeks that are very bbq friendly that I'm going to be testing out, like baked beans and cornbread muffins! Super excited about working on those recipes.

Evermine is a cute shop where you can create all kinds of personalized labels and gifts for all sorts things, and I would feature their products along with a recipe over here on my blog and on their website. I haven't worked with Evermine for years now, but these Moscato Cupcakes definitely require an updated recipe card and a new photo or two!

It's been a long time since I've done a cookbook review and I'm so excited to share not only this recipe with you, because holy smokes is it good, but the cookbook I'm going to share with you is also one that I think would be a good addition to your cookbook library...if you like to cook, and cook "outside the box" sometimes.

What cookbook am I reviewing?? I'm glad you asked! This is Half Baked Harvest's newest cookbook "Every Day" and it is a very beautiful book indeed! This is Tieghan Gerhard's third cookbook and she also runs the blog Half-Baked Harvest which is also a beautiful site with many drool-worthy recipes.

Weekly Menu for the Week of May 8

Whew! What a weekend! We drove to the coast on Friday for Grace's graduation from Ecola Bible College (she's also home now, yay!). Then Josh turned around and drove back to the coast for his brother's bachelor party; meanwhile we had a "tea party" themed potluck at church where Eden made the cutest sandwiches - look for the picture in my IG stories. But the kids and I just rested when we could on the weekend. Didn't do a lot of chores. Went to bed early. Actually, it was kind of perfect in that respect, and just what we needed, I think!

We have another busy week ahead of us and from what I'm hearing from you all, we're not the only ones who are running here and there and doing all of the things! Just the way May goes, I guess!

Let me ask you this...is there one night where you can tell your whole family to not make plans except for the plan to be with each other around the dinner table?

Happy month of May everyone! This is always our busiest month of the year, hands down! We've got four birthdays this month, Mother's Day, a college graduation for Grace, a bachelor party weekend (that Josh is going to) and all the wedding things because my little brother is getting hitched! It's going to be a very busy first three weeks for us...is your May like this, too?

Chocolate Muffins

This simple recipe for chocolate muffins makes a great snack for the kiddos, a side for brunch, or an afternoon pick-me-up with your coffee!

I absolutely adore having a great baked good around for snacks for my family. Whether it's banana bread, power balls, or even just a dang good cookie, kids just always seem to want a snack and I like to give them something other than processed, store-bought food whenever possible. My favorite snack to give to them is probably a homemade muffin with a side of fruit. Some of our favorite muffins to make are these peanut butter & chocolate oat muffins or these morning glory muffins.

Yes, the muffins in this recipe have chocolate in them, but don't confuse them with a dessert cupcake. If you want a chocolate cupcake, I've got these devil's food cupcakes for ya! These chocolate muffins have good quality chocolate in them which isn't quite as sweet as a candy bar, and pantry ingredients that will have you whipping these up in no time!

Hello!!! I hope you all had a great weekend! We had our usual Friday night pizza with the kids and we watched The Phantom of the Opera at The Royal Albert Hall, via Eden's request for our movie. Saturday, Josh got my car detailed for me (first time since we bought it two years ago!)...and then he and I tried out a "new" to us restaurant, Filbert's Farmhouse Kitchen...and then on Sunday we had lunch with a wonderful family from church...and then the kids came home and worked on pine wood derby cars....a very packed weekend filled with good things!

Today, my little Eden finished Kindergarten! Which means one year of homeschooling for one of my kids is under my belt. I can't believe she is now officially a first grader! Eeek! She is such a small little thing and first grade is such a big deal. And not only that, but Grace is turning 10 years old on Sunday! There are so many big events going on in my house this week and to celebrate, I made cake!
