How was everyone's long holiday weekend? Did you get the day off or not? Because Josh works for a bank, he almost always gets the holidays off (like my dad did at the post office), which is nice, and we just spent the day getting a few things done around the house like cleaning out the fridge, putting together a bookcase, washing sheets...buying books...

To be honest, I struggled with the weekly menu this week. I just couldn't come up with anything, which is why I deep cleaned the fridge. I really needed to see what I had to form a proper menu this week. Sometimes it's that easy or simple. You take a few extra minutes in the short-term to make something a little bit easier in the end. I was able to make my menu after that and bonus - it all sounds good!

Hey, friends - Happy Valentine's Day Week! I hope you all had a nice weekend. Since some of us are still under the weather over here, we just took the weekend easy. Didn't really go anywhere. Just stayed home and read and rested and got a few chores done.

How many of you are going out for a nice Valentine's Day dinner Tuesday night? Josh and I usually (not always, but usually) wait to celebrate our Valentine's Day dinner a little later (to avoid all the crazy), and this week is no exception since he is not feeling well right now. I do, however, always make a "fancy" dinner for the whole family at home, though. I like being with my kids on Valentines. I think it's nice.

Chicken & Broccoli Alfredo Casserole

It's February and I'm missing spring. Every year about this time I begin feeling like this. I'm missing the sun. I'm craving warmer breezes. I need to taste little hints of spring in my food. The reality is, though, that it is still winter, and here in the PNW, winter looks like grey skies with either rain showers or just really cold temperatures. The fireplace is always on and I'm living in leggings. Oh, you, too? I knew that we were destined to be friends! 😆

Fall and winter, in my opinion, is very much casserole season. It's a big deep baking dish full of cheesy, comfort-y goodness, and this chicken & broccoli Alfredo casserole is a bit of both seasons. Winter, with pasta, cheese, and being baked to perfection. But also spring, with fresh herbs, bright lemon juice, and zest.

It's like a going away party for winter and a tasty invitation for spring.

I have been so excited to share this recipe with you. I've tested it and tested it and made it until we (my family) thinks it is perfect! This is the meal you want to make when it is either really cold out - maybe even snowing - OR when it is just a yucky stormy day and you don't want to go anywhere. It is the kind of meal that feels, smells, and tastes like pure, homey comfort, AND it is also the kind of meal that you could easily serve to some guests in your home if you wanted to warm them up and make them feel cozy.

Basically, to me, this is the perfect winter dinner and I've been itching to share it with you.

Weekly Menu for the Week of Jan 23

I hope you all had a nice weekend. We're headed out of town this coming weekend to celebrate a wedding - I'm a little excited because I'm going to get to visit Leavenworth, WA on the way back, which has been on my bucket list of places to visit for years. I'll be sharing pictures next week online, I'm sure, as well as on our newsletter!

That's right, you're hearing it here first! We're going to do a monthly newsletter, sending it only to email subscribers. We'll be sharing kind of an update of the things our family is enjoying and doing, recommendations and reviews, books we're reading, that sort of thing. Stay tuned for that at the end of the month. And subscribe to our email list, if you don't already!

Here's this week's menu! I think this week has a nice variety of options for you to choose from and none of them call for expensive ingredients - although, let's be real: All grocery items are expensive right now. Don't even talk to me about the price of eggs.

Weekly Menu for the Week of Jan 16

Happy 2023, friends, as well as Martin Luther King Jr Day today! I hope you all have been enjoying your new year thus far. I know we took quite an extended break. It's been a busy few weeks for us with flying to California for Josh's grandfather's memorial service (also, Cub's first flight - he did very well!). We've had some family in town and we've been trying to spend time with them before they leave, Grace going back to school, and just trying to settle back into life.

It is always an adjustment after any kind of break!

I'm going to jump right into the menu for the week. I hope you're hungry!

If you're new here or it has been awhile let's do a quick refresh on what a typical menu here at Catz looks like. I suggest seven dinner recipes to help plan out your week along with one dessert and one breakfast recipe - that I recommend usually for your weekends. Some of these recipes are inspired by what I'm cooking for our family; other times, they are recipes that have actually made it to my own personal menu for the week. Either way, I always try and provide a variety of recipes that will help you plan out meals for your family and invite you to sit around the dinner table instead of the couch or just grabbing fast food.

Of course, we all live in something called "real life" and sometimes we just really want to sit in front of the tv or maybe it is more convenient to grab dinner on the way home from one of your kid's sports practices. That's okay, and we certainly do it, too! The whole idea around the menu is to help you create some moments in your week when you all have a designated time to sit around the table and find out about each other's days. It is something my mom always worked hard at doing as I was growing up - I always enjoyed that time and want to create that for my family as well.

Easy Cranberry Streusel Pie

Have I got the easiest dessert for you! This will probably be the easiest recipe that I share with you throughout the rest of the year, and one of the reasons I really like it is because I truly feel like it will free you up and take off any pressure you might be feeling this holiday season.

The month of December is pretty much crazy for everyone. I mean, really, the crazy starts just before Thanksgiving and goes until New Year's Eve, I feel like. For us, Josh is working long hours (like a lot of people) and traveling about once a week. Grace is away at college but coming home soon. I'm busy taking care of a baby and beginning to wrap up our homeschooling season for the year.

I'm feeling the pressure to buy, buy, buy from various social media accounts sharing gift guides that always seem to be really expensive for some reason, and trying to say yes to all of the things, in spite of myself!

But I'm refusing to give in this year. Last year I said I was going to take the season gently and I didn't. There was so much going on that by the time Christmas came around, I honestly didn't want to get out of bed...some of that could have been morning sickness, too - I was around 9-11 weeks pregnant around then.

Cranberry Streusel Pie

This year, I'm choosing to breathe instead of hyperventilating and choosing the season my family life is in verses the season we've been in other years.

This season, I want to bring you recipes that bring joy to the kitchen, the family you live with, and the people you surround yourself with. Doesn't that sound nice? I mean, I may not get to very many recipes for a lot of the same reasons, but, hey, I do have a pretty good catalog of Christmas recipes here already, thank goodness!

Easy Cranberry Streusel Pie with ice cream

Enter this EASY Cranberry Streusel Pie!

For one thing, you use a premade frozen pie crust that has already been shaped and molded for you. I'm talking Marie Calendar style. Simple ingredients that you hopefully already have on hand, and one bowl...okay, two bowls...but that is it.

This is the dessert that you'll want to make if you don't have a sweet tooth, because cranberries are tart and they are the star of this pie. However, the cranberries are accented with some warmth from cinnamon and nutmeg and brightened up with a little orange zest.

You can make this ahead or make this the day of. You can store leftovers at room temperature for one day or chilled and covered for up to five days.

So easy. So much flexibility. Are you intrigued?

As a bonus, you can even dress the pie up a smidge by removing the tin that comes with the purchased pie crust and transfer the pie to pie plate instead. That's what I did. Or you don't have to!

We served our pie with a good quality homestyle vanilla ice cream, but homemade whipped cream would be beautiful here as well. Or if you're ambitious, feel free to make your own vanilla ice cream. Or skip the homemade whipped cream and use canned whipped cream from Costco.

Easy Cranberry Streusel Pie with ingredients

So many options to elevate or keep it simple.

If you've got 15 minutes...truly...that's all it takes to make this pie, grab the recipe and bake this for your family one night, a church potluck, a dinner party potluck, your Christmas dessert, or just because. Let's be honest, in my family you never need an excuse to make or serve pie. It is always a welcomed sight at our table. (Editor's note: YES)

Easy Cranberry Streusel Pie

Yield: Serves 8
Prep Time: 15 minutes
Cook Time: 55 minutes
Additional Time: 2 hours
Total Time: 3 hours 10 minutes

This recipe for Cranberry Streusel Pie is about as easy and flexible as any festive holiday dessert could hope to be!

Ingredients

  • 1 lb (16 oz) fresh cranberries
  • ¾ cup granulated sugar
  • ⅓ cup quick-cooking tapioca
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • ½ cup brown sugar
  • ⅓ cup chopped walnut pieces
  • ¼ cup all-purpose flour
  • 2 tablespoon unsalted butter, cubed
  • 2-3 teaspoon orange zest
  • 1 frozen 9-inch deep dish pie crust (do not thaw)

Instructions

  1. Position rack in lower third of oven and preheat oven to 350 degrees. For the filling, mash cranberries and sugar with a potato masher in a large bowl. Stir in tapioca and set aside.
  2. Stir together brown sugar, walnuts, and flour; cut in butter using a pastry blender or use your fingers to work the mixture into coarse crumbs. Stir in orange zest.
  3. Pour filling into pie crust. Top evenly with streusel. Bake pie on a foil-lined baking sheet until crust is golden and filling is bubbly throughout, about 55 minutes. Cool on a wire rack for at least 2 hours before slicing. Serve with whipped cream or vanilla ice cream
  4. Pie will keep covered at room temperature for one day or chilled and covred, for up to 5 days.
