If you're a coffee lover, this cookie just might become one of your new favorites. Well, first let me just ask, do you like cookies? Do you like coffee? Good, then chances are you will love these cookies and they might even become one of those cookies you make regularly!

It's always a toss up for me what my favorite kind of cookie is. Is it a sugar cookie or is it a chocolate chip cookie? I think I've finally settled on the fact that is has to be a chocolate chip...mostly because I don't get sugar overload and there are so many ways to play with the flavor combination.

Did you know that I'm no longer buying cereal for my kids? I just got tired of buying it, and sadly a lot of it's not really good for the kiddos anyways. I personally haven't found cereal to have many redeeming qualities, aside from being super convenient (I realize others may feel differently!). Now, I'm not such a snob that I would say I am never going to buy cereal again - in fact, I have a box of Honey Nut Cheerios in my cupboard right now as a snack for Cadáin's snack cup. But I am really trying to be intentional with my kid's breakfast and offer them other alternatives. Like this overnight baked oatmeal!

I've made overnight oatmeals in the past and they have not been very good. I've made overnight and slow-cooker versions and they always seemed to get burnt or just not taste very good. Or have weird texture issues. This one, however, is excellent, and in fact, I've got a slow-cooker version I want to share with you soon, too.

Weekly Menu for the Week of Jan 15

Hi friends! Are you guys experiencing an icy/snowy blast as well? We were promised something like six inches of snow, at least...but what we got was a dusting of snow and freezing rain + sleet and now our whole area is essentially an ice cube. So we've stayed in all weekend, eating good foods (meatball subs, biscuits and gravy, and charcuterie boards), playing games, reading, watching movies, drinking coffee, and lounging. It's been so good for us! I'm hoping that you haven't lost power and that it has also been a relaxing time for you as well.

I was blessed by some of our neighbors' hospitality this weekend, and I just wanted to share in hopes that it might inspire you to do something nice for one of your neighbors! One of our neighbors had a bunch of the neighborhood boys over to their house to have a break from the icy weather and made them all pizza. I was so grateful for that because not only was it such a sweet thing to do, but it was just so generous. And today, I asked one of my neighbors if I could borrow three eggs for the biscuits we were making for breakfast, and she not only gave us three eggs but a whole dozen of farm fresh eggs...which was like handing me a platter of gold! Fresh farm eggs are everything. I will literally pay all the money for good quality eggs. Makes me think that we should all look for ways to bless our neighbors. Cookies? Homemade granola? Fresh flowers?

Hey friends, I hope you had a nice weekend! Josh and I tried out a new restaurant - we've been actually doing this more and more and it's been so fun! This past Saturday, we tried a restaurant called Oso - a Spanish & Mediterranean inspired restaurant, and it was so good! Highly recommend. (For locals, it's down in Silverton - check it out.)

This is our first full week back to school after our holiday break and it will be a full week, so I've planned some very easy meals for us. Here's what's on the menu this week!

Happy New Year, everyone! I hope you all had a wonderful "weird" week last week. Apparently that's what the name is for the week in-between Christmas and New Years. I get it, it kind of is a weird week. I felt tired and sluggish. I slept in all week and just got a few things done. Living life without my usual routine is definitely something to which I am not accustomed.

New Years is often a time when people are ready to get back into a normal or healthier eating routine. I ate lots of cake and cookies last week...and it was wonderful. But my body is now begging for some whole foods that are good for me! So my menu will be a reflection of healthy and satisfying meals. Those things can be the same or they can be two different things! It's up to you!

Weekly Menu for the Week Dec 18

Oh my gosh! Can we all just take a moment and inhale...and exhale. Stop what you're doing and just take a few breaths. I know it's the week before Christmas and, as usual, I am not done with my Christmas shopping! Josh and I made a plan to be done by the end of November...well, we're not. So I am going to take a deep breath along with you guys.

What does dinnertime usually look like for you guys around this time in the month of December? If it is the same as it is for us, it's probably hit or miss. But I'm really aiming to make all of the meals that I've planned for this week. I did well last week, and I suspect this week will be the same only because we don't actually have a lot going on until the weekend.
